  • THAI VEGGIE BALLS
    INGREDIENTS:
    FOR VEGGIE BALLS
    3 Cups Finely Chopped Cabbage (Approx 250 grams)
    3 Tbsp Finely Chopped Red Onions (Approx 50 grams)
    ¼ Cup Finely Chopped Carrots (Approx 50 grams)
    3 Tbsp Finely Chopped Green Bell Pepper (Approx 40 grams
    Med Size Potato Boiled & Grated (Aprox 120 grams)
    ½ Cup Grated paneer (Approx 70 grams)
    Coarsely crush
    ¼ inch Ginger (Approx 10 grams) )
    2 Big Garlic cloves (Approx 10grams) )
    3-4 Green cillies * use as per your heat tolerance. )
    Do not add salt (add only if needed time already veggies have lot salt in them)
    1 Tsp Kashmiri Chili Paste
    ¼ Tsp Sugar - Optional
    2 Tbsp cilantro
    Few Thai/ Italian Basil Leaves
    2-3 Tbsp of Cornstarch (first add 1 Tbsp and then add 1 tsp at a time)
    2-3 Tbsp of All Purpose Flour: Maida (first add 1 Tbsp and then add 1 tsp at a time)
    Please not no additional salt is required. However do the taste taste and add salt only if necessary.
    FOR THE SAUCE
    2 Tbsp Oil
    3 Tbsp Finely Chopped Onions (Approx 30 Grams)
    1 Tsp Finely Chopped Ginger (Approx 5 Grams)
    1 Big Garlic Clove - Finely Chopped (Approx 7 Grams)
    1 Tsp Lemon Grass - Finely Chopped
    2-3 Kaffir Line leaves finely chopped
    1-2 Green Chillies - Chopped (use as per your heat tolerance)
    1 Tsp Sugar
    ¼ Tsp Aromat Powder
    Salt & Pepper to taste
    1Tsp Soy sauce
    1 Tso Rice Vinegar
    1-2 Tsp Kashmiri Chili paste (use as per your heat tolerance)
    2 Tbsp Tomato Ketchup
    1 Tbsp Green Onion - Chopped
    Few Thai/ Italian Basil leaves
    Cornfstatch Slurrry (½ Tsp cornstarch + 1 tbsp water)
    Finely Chopped Peanuts
    NOTES/ TIPS
    1) Please not no additional salt is required. However do the taste taste and add salt only if necessary.
    2)In a big bowl mix all the veggies and sprinkle 1 to 1 & 1/2 tsp salt. And mix well with clean hands. Leave them for 30-45 minutes.
    This step is crucial so do not skip it. If the veggies contain too much moisture, you will need to add extra flour to form the dough, which could make the balls hard.
    3)Once you make the balls, Fry the balls immediately. Otherwise, the veggies will begin to release water.
    4)Once you drop the balls into hot oil, wait until the bottom begins to turn golden brown before turning them, as they may break otherwise.
    5)Once you add the veggie balls to the sauce, simply toss and reheat them for no more than a minute. Cooking them any longer may cause them to break.
