5-6 Eggs
1 tbsp All purpose Flour (optional)
Manchego cheese (optional)
Fresh parsley (optional)

1/2 tsp Oregano
1/2 tsp Sweet Paprika
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/2 tsp Dry Parsley

After the Civil War there were no jobs. The soldiers rode trains and carried a hoe, trying to find work. They became known as Hobos (hoe boys). They would see farms and jump off the train to see if they needed help. If there were no jobs, they would raid the garden. Get a head of cabbage, onion and raid the chicken coop for eggs. They cooked their meal in anything they could find. I’ve cooked this “Hobo dinner “ for years. Reminds me of the Hobos that still rode the rails in the 1940’s.
