Using wrong grinder machine, they should use meat grinder, but process with a Mado mixer grinder which make very low capacity, because big block meat will stop mixing paddle.

Interessantes Video.
1. Volle Eiszugabe zuerst in den Kutter, statt während des Kuttervorgangs anteilweise
2. Was fummelt der Mitarbeiter mit einer Schere in der Schüssel mit gewolftem Fleisch herum?
2. Der Trick eine Metall Schüssel über den Auswerfer zu halten, dass kein Brät hoch fliegt ist schlau
2. Der Trick die Räucherstöcke auf den Tisch zu legen statt wie üblich mit vollem Wurstgewicht in der Hand zu halten und die Würste aufzureihen ist schlau
3. Der Betrieb sieht baulich sehr modern, aufgeräumt und sauber aus - hoffentlich nicht nur bei Drehterminen :-)
4. Anstatt mit den Händen wird in Korea gerne mit Schabern gearbeitet - wie viele sind wohl schon im Kutter bzw. Brät gelandet?
5. Naja über Verwendung von Schäldarm kann man sich streiten - ist in Asien und den USA meist Standard
6. Der Durchmesser des Füllrohrs zum Füllen der Stückware (grosse Würste) ist zu klein gewählt zum Befüllen der Stückwurst-Kaliber - Rohrwechsel ist Zeitverlust :-)
7. Das Füllen der Stückwurst sieht handwerklich nicht sehr professionell aus - richtig gemacht geht das viel zügiger
8. Wurst ist sehr schwach geräuchert - das entspricht aber wohl dem lokal vorherrschenden Konsumverhalten der Koreaner
Am interessantesten finde ich aber, dass alle gezeigten Maschinen, Geräte und Einrichtungen nur von namhaften, bekannten und teuren europäischen Hersteller kommen. Bei Alibaba und Co. kann man ja unterdessen komplett nachgebaute Würstchenlinien, Kutter, Wölfe etc. kaufen zu einem Schnäppchenpreis. Würde man annehmen, dass die Koreaner auf Günstig setzen. :-)

All that real meat in sausages! Personally, I'd like the sausage meat ground less fine, but they look good as they are. I trust this is the usual process and not just a gloss job for the video.

the process is awesome
From a UK sausage butcher of over 39 years experience why would you mince then put in bowl chopper, ridiculous. In UK much the same process, but far less chopping, so the finished sausage meat is chunkier, we add herbs as well. Not sure I would like this meat paste sausage.
