    I live in europe. All the spice mixes are already available here including UK. I think the surprise of seeing ones in india is for the video and for the indian audience for them to make feel good about themselves.

      @@carriepatsalis These aren't homemade either, they run a business. There are better brands in India who source better spices and have standard ratios for mixes, which are also available abroad.

    Having a local guide is a well thought of an idea to richly experience & immerse in that zone's culture & ethnicity.
    I am also a Delhite - rarely get time to visit Old Delhi due to the job overload.
    Nevertheless, watching my city through your lens is refreshing and wholesome.

    Lemon is used to cut the spice in the curry. For some curries curd is used. Depends on the flavor.

    Flood of memories, and drool, of my 25+ years in Delhi came rushing back!
    From visits in winter to paratha wala gali (alley of paratha makers), Karim's (an institution dating back to the Mughal rulers) to jalebis and samosas (a teatime fave) that my parents would tell me to go to the neighborhood market for. Karim's is also famous for its dessert, phirni/firni, made from ground rice.
    Every residential neighborhood had its own famous shops that people from other neighborhoods would visit.
    The clay pots for sweet yogurt, phirni, tea and lassi are NEVER reused, but broken after every use. Income for local potters too.
    The ONLY thing I DON'T miss about Delhi is the summer heat, up to 45°C/120°F IN THE SHADE!.

      Daytime temperature is a pleasant 22 to 25°C while the night can usually dip to 4° to 2°C. 0° to -2°C around dawn is not unheard of in New Delhi.
      Naturally, December to March is FULL tourist season. All the Indian students studying abroad head home for the holidays. Traveling during Christmas season is a nightmare normally. Now add to that a 17+ hour flight (US route), crammed plane and bawling babies. The best moment to rate an airline and your cabin crew.
      My wife went insane buying clothes, sandals, handicrafts AND...18K to 22K gold jewelry. My mother would do all the bargaining if I wasn't on hand.
      Back in the day, I would get tailored suits and leather coats/jackets with uniquely patterned silk linings. Leather shoes, cotton shirts and silk ties were on MY work related shopping list.
      What I MUST give you and your husband credit for, is taking your sons along for the journey. I'm certain that they will ALWAYS remember these times and also know that very few other children would've had anywhere near the same exposure to the world and rich cultures that you and your husband have given them.

      REALLY miss that city, despite India being one of 9 countries that I've lived in since the age of 5 (going by memory). Otherwise, it would be 10 countries.

    You don't need to come to India to taste Indian food. Specially if you are from UK. Everything is available there as well.
    But yes to experience India and its vibe you definitely have to.

      Correct.. I work full time in london and of course have kids so sometimes I have to pick between faster edits and longer ones, particularly when work is full on (which it is this week).. some videos require more work so I just forget anything linear and just roll with it 😁

    Amazing series of videos, I've been binge watching a lot of these Carrie! from your journeys across the subcontinent, I couldn't help but notice you haven't chanced upon the modern areas of Delhi/NCR yet like Gurgaon, Cyber City, Aerocity or South Delhi. Will we see those in your future videos or you didn't happen to go there? Also did you visit other modern cities like Mumbai, Bangalore or Hyderabad? Also, I love the fact that Mutton Roganjosh is your favourite dish as well, I swear by Roganjosh.

      @@carriepatsalis Agreed, I prefer some green foliage and nice undulations in the terrain rather than concrete jungles.
      You could give Odisha a shot the next time you're in India. It's a very underrated state, quite safe, has the largest brackish lake in Asia, great sea food, Hills, beaches where the water recedes 5 kms during low tide.
      Also the wheel in the centre of India's flag comes from a Sun Temple there.

    There has no tea garden in Pakistan. Usually Pakistan imports tea from Bangladesh and Sri Lanka.

    Indian subcontinent forgets about street foods, even restaurant foods are made not following hygiene. Roads are dirty, kitchens are dirty, people do not use gloves or clean hands, utensils are dirty and the culture is dirty.
