- Danny is back with another episode of Cookin' in Brooklyn! This week he's frying up some eggplant and stirring up a wine-butter reduction for chicken sorrentino!

Here's the recipe:
Chicken
Eggplant
Prosciutto
Mozzarella
Flour
Egg
Olive oil
Butter
Sherry wine
Chicken broth
Pre heat oven to 375.
Slice eggplant lengthwise.
Apply olive oil into pan and heat.
Flour and egg eggplant and place into pan when oil is hot.
When eggplant is done, place on a paper towel to drain oil.
In a new pan, apply olive oil again and heat.
Take chicken and flour it, and add to pan when oil is hot.
In new pan, add butter.
Add flour.
Add a little more than half a cup of sherry wine.
Place chicken into the pan.
Add some chicken broth.
After flipping chicken once, place prosciutto on top of the chicken.
After one minute, place eggplant on top of the prosciutto.
Let the sauce reduce for a minute or two, then shut off flame.
Transition chicken onto a baking sheet and add mozzarella.
Place into oven until mozzarella is melted!
When cheese is melted, throw back into pan with sauce and let it cook for 1 and half minutes, and we are ready to eat!

Definitely. Danny is all about putting your own twist on it but certain combos don't always work. Dave of course wants cheese on everything lol

Danny and Dave are Brooklyn natives and Danny’s family is from the Amalfi Coast where he has spent a lot of time and speaks fluent Italian. The whole crew knows his “real” Italian family from the motherland. We definitely do more of an Italian-American spin on dishes and Danny will note when his family in Italy wouldn’t approve :)
