Why do so many people feel the need to add garlic to anything perceived as an Italian dish? Garlic is used sparingly in Italy, and definitely not in carbonara. Admittedly, guanciale is cured with some garlic, but it’s subtle.
Still I would rather have garlic than peas. The heck, I can even understand the cayenne pepper for the people who like it hot but without using handfuls of pepper. But the peas and parsley can't be explained. Even adding a half cup of cream instead of cheese for the people who don't like the strong flavour of some cheeses is explainable.
