      @@jblvxk I mean, there kind of is. For instance, this is a “taco” in France (th-cam.com/video/wP2PBCWRA74/w-d-xo.html). Words mean something, and when you start to deviate away from that original meaning to a free-for-all, then anything can be anything. If I make spaghetti and meatballs and call that “carbonara” I’ve eliminated its meaning.

      @@jblvxk LMAO, There absolutely is. In fact because you said that, it shows that you know absolutely nothing about what you are talking about.
      Italians are extremely traditional, so they do not have multiple ways to make it. Carbonara is done one single way, mostly in Italy. So there absolutely is a correct way.
      Carbonara is always, dry long pasta, guanciale, pecorino, eggs and pepper. That is it, Italians dishes are extremely simple, and they keep it simple. They are extremely traditional, and get angry if you change anything on the dish... That said that doesn't mean traditional is better. But it is a fact, that if you say you make a Carbonara, and change one of those ingredients or add any other, actual Italians will get mad. There are no multiple ways to make Carbonara in Italy, those ingredients, with he right technique is carbonara. Again, it doesn't mean is better, I am not in favor of everything traditional, but that is not the point.

      Why do so many people feel the need to add garlic to anything perceived as an Italian dish? Garlic is used sparingly in Italy, and definitely not in carbonara. Admittedly, guanciale is cured with some garlic, but it’s subtle.

      Still I would rather have garlic than peas. The heck, I can even understand the cayenne pepper for the people who like it hot but without using handfuls of pepper. But the peas and parsley can't be explained.
      Even adding a half cup of cream instead of cheese for the people who don't like the strong flavour of some cheeses is explainable.

      Guanciale isn't always readily available. Sometimes pancetta is the closest substitute. But as to the reset, I agree. Not enough egg yolks for that amount of pasta, that's for sure.

      The original dish, while fantastic, isn't good for you at all. It needs some veg...I would augment it with a side salad as well.

      @@josiaharaki7310 The parsley, pancetta, and choice of cheese were also wrong. I am willing to overlook the pancetta though-guanciale is very difficult to find in the USA without seeking specialty Italian groceries or buying online.

      ​@@mitchellrhodes270 First and foremost Mr. Guy Ramsay Ferry was born in Columbus (OH), which legally and under a heritage standpoint makes him American. Because last time I checked the wonderful state of Ohio is in fact located in the continent of America and is part of the United States of America. His grandfather immigrated from Italy, but that makes him not Italian. If anything, he has Italian ancestry. Secondly, this restaurateur and tv host is desecrating Italian cuisine by calling that ungodly pandemonium a traditional carbonara. It should be noted that cuisine is in fact an integral part of a country's general cultural identity, therefore by extension he's offending the entirety of Italy. I wouldn't have had a problem if he'd called that thing Strankelfiddle, his peas and egg pasta, a carbonara-inspired recipe, his own variation/intepretation/take on carbonara of anything of the like. However, by calling it a traditional carbonara he virtually spat on Italy's face. Last but not least, in the industry he's vastly known for being a distasteful, rude and entitled scumbag. For all of above I elected to label him as I did in my original comment.

    OMG why???? Carbonara: 1 it's name is SPAGHETTI ALLA CARBONARA so u use spaghetti not bucatini
    2 carbonara Is very easy it has 4 ingredients: spaghetti, eggs, guanciale (or pancetta if u don't have it), black pepper and if u what parmigiano!!!
    U don't have to cook the egg, go with the pancetta then you put the pasta u turn off the fire and u put the eggs!! So easy!!

    Oh Dear. Not good Guy!
    One of the worst "carbonara's" my partner and I have seen was in a resturant in Portugal. She had it, I didn't. I could see all was not well by the look on her face. I tried it and all you could taste was onions! Bloody onions!!
    I complained. "That's how we do our carbonara" I was told. Yeh, cook whatever that dish was but don't call it "carbonara"!
    I don't think I've seen a simpler and more delicious dish being abused so often.

      To be fair, the same article you posted says the following, translated into English and links to a vegetarian carbonara using artichokes. Go figure.
      Are you still wondering if you need pancetta or bacon in carbonara ? The classic carbonara only includes bacon. In addition, there is no addition of milk or cream.

    Seeing Guy Fieri like this has made me realize he it actually so smart and well spoken. I’ve always seen it but here he is so genuine and natural that I really see how much he knows about food. He has very good taste. I’m making this right now as we speak because of this 😍🍝🍳🧀

    You have to use guanciale and not pancetta, pecorino and not parmigiano- NO parcely, peas and cayenne. But overall if you don’t have pecorino and guanciale you did it right. Much better than Gordon Ramsey. Good job Guy!

    Parsley and peas? I can dig the peas but not the parsley. The only reason he did that was because he had to set his apart from the rest.

    This recipe is a disgrace. Don’t call it carbonara, call it the American version smh .. there’s no pees or parsley in the carbonara

    No green peas in carbonara classica!! To cook a carbonara classica go to Vincenzo's Plate - He as Italian will show you how to cook a carbonara classica.
    Sorry but this is not the classic and authentic way.

    Simple ingredients are too difficult for you? Cheek eggs pepper and pecorino stop, no oil no parsley no peas no cayenne pepper no bacon no pancetta.

    Oh my goodness! How are you famous if this is the quality of your recipes? Good grief. I make more authentic Carbonara than this and I can only get Guanciale once in a blue moon. Also I know youtube hides dislikes now so I’m gonna tell you now, I clicked dislike and if I could do it twice I would. 👎🏻👎🏻
