Japanese mayo and American mayo are very different. Japanese eggs are insanely higher quality than American eggs, so much so that you get a 99.9% chance of no salmonella when eaten raw. Take that egg with apple vinegar to make mayo, and you get a sweeter, richer mayo, rather than the sour and tart American mayo.
