Hey Ollie! I think I'm pretty good at making omelettes so I want to help. First, mix the eggs, milk if you like it, salt and paprika if you want in a separate bowl. Pour a good amount of oil into the pan and let it heat. Then pour your mixture into the pan and just wait, don't touch it until you are sure it's not sticking to the pan and coming off easily. Then use a spatula, not a fork to flip your omelette and then wait for that side to get nice and brown. Your omelette is ready and you won't have to make scrambled omelettes anymore! Hope this helps.
So here's how I make my omlette (probably ollie should try it for better omlette). Step 1: mix the egg in a different bowl for atleast three minutes and add any veggies or peppers you want to. Step 2: pour oil in the pan and let it be hot (you'll see the bubbles when it's hot) Step 3: then when it's hot pour the egg mixture and use a spatula, fold it till your taste ( i like to make it brownish yellow( Step 4: and baam! you have a beautiful omlette right there !

My advice. It is better to take a separate bowl and mix eggs with milk in it (50 grams of milk per 1 egg). It is better to beat with an ordinary mixer until slightly fluffy. Then add a pinch of salt, grease the pan with oil and pour the resulting mixture into it. Cover with a lid and put on a slow fire for 18-20 minutes. Enjoy your meal!

With everyone jumping on the nonstick pan thing: I feel personally summoned from the day job to explain the “why of pans thing… (I’ve taught many college freshman this)” (environmental geochemistry- containments in water). What makes most non-stick pans special (the non-stick part) is a group of water proofing chemicals called PFAS sold under the name of “Teflon branded pans”. Don’t mistake it- the chemicals are amazing- waterproofing (Gortex water proof clothing), flame retardants, etc- but the downside is that they are known carcinogens “cancer-causers”, and pose a significant risk, especially when heated. So, the largest risk for exposure (for PFOA/PFAS) for most people is cooking with their nonstick (Teflon pan) using a metal fork and scratching the coating, which then is volatilized (heated by the stove) and the person ingests it in their food. Remember, in environmental health exposure, we talk about risk minimization, so the solutions are often “use a wooden spatula if it is not cost permitting to switch pans”. When it's hot enough (stick something wooden in the oil, if it fizzes, youre good) add the eggs and it should immediately crackle up. Add a little cheese on top maybe, spring onion, ham etc. Get your spatula, slide it under the omlette completely so it's completey deattached from the pan's surface. Then flick over half of it, and roll it on it's side.
1. Heat your pan to medium heat with a bit of butter. 2. Scramble 1 or 2 eggs with a pinch of salt and a splash of milk in a separate bowl (3 eggs is a bit much for the average person). It's fine to use a fork here, but NEVER in a nonstick pan! 4. Gently pour in eggs in the heated pan and tilt the pan around to fully coat it with the eggs. 5. Cook 2-3 minutes or until the edges are cooked through and the top is slightly wet but not runny 5. Use a silicone spatula to gently fold over your omelette. It should be a silky smooth yellow color. If it's brown, you've overcooked it.
