Very important to immediately bleed the bluefish while it's heart is still beating. Thorough bleeding of the fish immediately will improve the quality for eating of all fish. I have found the best way to accomplish this is to cut the tail through the spine and put the fish back in the water on a stringer. Do not cut the gills. Intact gills will deliver oxygen to the fish and keep the heart beating. To be humane render the fish unconscious with a quick blow to the back of the head before cutting the tail.
