- The process of making jaggery (gur) involves extracting sugarcane juice and boiling it to produce an unrefined sugar product. Here is a step-by-step explanation of the traditional jaggery-making process:
1. Harvesting Sugarcane
Mature sugarcane is harvested manually or mechanically. The quality and sweetness of the sugarcane significantly affect the final product.
2. Crushing the Sugarcane
The harvested sugarcane is fed into a mechanical crusher to extract its juice. This juice is collected in large containers.
3. Filtering the Juice
The sugarcane juice is filtered to remove impurities, such as dirt, small fibers, and debris, using a fine mesh or cloth sieve.
4. Boiling the Juice
The filtered juice is poured into large, shallow iron or aluminum pans and heated over a wood or coal-fired furnace.
Continuous stirring is done to prevent the juice from sticking to the pan. During boiling, impurities rise to the surface and are skimmed off.
5. Concentrating the Juice
As the juice boils, water evaporates, and the liquid thickens. The process is carefully monitored to achieve the right consistency.
Lime or natural clarifying agents like bhindi (okra) extract may be added to enhance clarity and prevent crystallization.
6. Cooling and Shaping
Once the juice reaches the desired thickness, it is poured into molds or onto flat surfaces to cool and solidify.
Workers shape the cooled jaggery into blocks, balls, or other forms.
7. Packaging
After cooling, the jaggery is packed in bags or boxes for sale in local markets or for export.

Color: The color of jaggery ranges from golden yellow to dark brown, depending on the sugarcane variety and boiling duration.
Types: It can be made from sugarcane juice or palm sap (toddy palm or date palm).
