At least in the US, best-by dates are not when the food actually goes bad. There is no federal regulation to have 'expiration' (meaning when it WILL spoil and you can no longer eat it) dates for on any foods except baby food. Best by dates tell the stores when to throw out the food because people won't buy it, and suggest when it will taste best because its fresher- they contribute to the insane amounts of food waste we make every week. If it's within a couple weeks of expiry and has been stored safely + still smells and looks good, or it's been in the freezer for less than 4 months past the date, you can still eat it. Your senses don't lie- humans are good at picking up signs of discoloration or bad odors.

Marinate for at least 20 minutes, or up to overnight. Heat 1 tbsp oil in a skillet over high heat. Remove chicken from marinade (reserve marinade) and place in the pan.
