Making Hotsauce with Ghost Peppers, Carolina Reapers & Trinidad Scorpions in an Instant Pot Blender

  • Making the third batch of a hot sauce I make called Hell Awaits, using peppers I've grown in my greenhouse this year. This batch is a combination of Ghost Peppers, Carolina Reapers, Trinidad Scorpions and a Ring of Fire pepper for good measure. I also used a yellow peppers and some tomatoes that I grew hydroponically in my greenhouse.
    I also like to throw in a carrot! great for both flavor and texture, similar to sauces that use peaches or mangoes.
    Feel free to of course adapt this recipe to suit your needs and spice tolerance, (and let me know how it turns out), but the main ingredients in my Hell Awaits III hot sauce are:
    10 hot peppers (Ghost Peppers, Trinidad Scorpions, Carolina Reapers and RIng of Fire Peppers) Find a pepper you enjoy depending on your heat tolerance
    4 cloves garlic (sauteed) -I love local Russian garlic for my sauces
    1/2 cup water
    1 tomato (I added a few smaller ones as well this time) (slightly sauteed)
    1 small yellow pepper (I used a 1/4 of a large one the first time) (sauteed)
    1 sweet onion (sauteed)
    3 tbsp Red Wine Vinegar
    2 tbsp Apple Cider vinegar
    Smoked Paprika (to taste)
    salt & pepper
    2 tbsp Olive Oil (for the sauteed ingredients)
    I use an instant Pot Blander which has a blended soup button. You could alternately stew all the ingredients together in a sauce pan, then put it all in a blender (or use an immersion blender), but watch your eyes if doing this. Also recommended to wear gloves when cutting peppers, and wash everything as soon as your done, just in case you decide to rub your eye or any other sensitive body part.
    Hot sauce is pretty easy to make and there are endless possibilities for different flavored sauces. This one works really well for me, I love it, and it's got great reviews from all the spicy folks that have tried it, including several folks at my local pub who get a little angry if I don't bring any to Monday Night Football games. So good on wings!

    I keep mine in the fridge, and it should last for quite a while due to the vinegars, but please do some research if you are bottling it differently.
