    Some people eat medium rare pork, but for most of us, it has to be well done. 8 minutes is not enough, no matter what "chefs" and the FDA say. If the pork is bleeding, I ain't eating...
    However, the recipe is legit. It's exactly how we were taught to make them.

    • @keithromero3095
      @keithromero3095 5 ปีที่แล้ว +3

      Yes. You're right. Always cook organic longer. But food science has added hormones (GMOs) that kill the bacteria making it easier and quicker to cook. Long cook times ruin meat (and pork) unnecessarily. Chefs are experts and love our momma's all we want. They were not experts. It makes me sad that people no longer listen to the experts. (Chefs!). You really think they want to make you sick and lose your money? They want you to taste a juicy gaddam poke-chop like it should be tasted. Not over cooked. Life transforming stuff.

    Larry, mmm! Double dipping is the way to go! I love the tip about draining the chops on a rack, not on paper towels. You've mentioned that before, and I've learned it! Here, it paid off because your chops were indeed crispy outside, tender and juicy inside!

    A couple of things when cooking pork chops. Before dredging, make sure the chops are at room temp! After dredging (in the egg wash and flour) place the chops on a wire rack while your oil comes to temp. Now, MAKE SURE YOUR OIL IS AT 350 or even a little higher. The temp of the oil will drop when you add the chop, so be aware of it. Lastly, before removing the chops, use a thermometer and check the internal temp. When you remove and put on a rack after cooking, keep in mind they will continue to cook, but don't poke them again with the thermometer because you do knot want to release any juices. Now, GO MAKE SOME SOUTHERN PORK CHOPS AND BE HAPPY!

    I'm sorry, but those pork chops were not done. You could see the blood on the plate. You can get worms from eating under cooked pork. Think your fire was way too hot, especially since the chops were so thick.

    • @TheWolfePit
      @TheWolfePit  8 ปีที่แล้ว +9

      +Donna Washington They were certainly done....maybe not to your desired doneness, but they were done to mine. If you'd like to overcook yours to well done that's your prerogative. You have a better chance of hitting the lottery or getting struck by lightening than you do of getting trichinosis from today's pork.

      +Donna Washington I concur, that chomped chop seems suspiciously pinkish at 2:57. Isn't pork supposed to be the other "white" meat? Trust me, you do not want to risk eating under-cooked meat, unless you trust the govt to inspect it for you, lol. If that's the case, then worms are really the least of your problems now, aren't they?

      Also make sure ur chops are thawed well and dry off any excess moisture from chops before dredging.
      ** if all is been done and still not crispy.. Try refrying in 🔥 hot oil for 30seconds before serving

    • @TheWolfePit
      @TheWolfePit  8 ปีที่แล้ว +18

      +Donna Washington I appreciate you watching too. But you should rephrase your statement, because it's simply not true. Pork is safe at 145º, which can still give you pink pork. You should have said, 'the chops were overdone for my personal preference', that would have been a better and truer statement. Just like a steak, I'm sure you wouldn't eat a rare steak either, however it's perfectly safe 99.9% of the time. Thanks again for watching!

    Google safe temp for southern fried pork chops
    In a 12-inch heavy skillet heat 2 tablespoons olive oil or canola oil over medium-high heat. Cook chops 3 to 4 minutes per side, until golden brown on the outside with just a trace of pink inside (145 degrees F with an instant-read thermometer

    Other than a bone, if a pork chop doesn't have some fat, it's not a southern pork chop.

    :30 “Whipping 4 eggs like they stole my lunch money.” Thumbs up just for that line. However, the recipe sounds good but the chops looked a little pink for my taste.
