We made your Pig In a Pumpkin and it was a big success. The drippings flavor the pumpkin in a savory way. All the seasons were perfect. The meat was tender and everyone nearly finished the whole meal. The gravy was delicious, using some drippings, flour, mushroom soup, milk and beef stock flavoring. Left some drippings plain for spooning over the pumpkin after served. Cooked the pumpkin seeds and guests said the meal was like holiday time.
I made a roasted pumpkin bisque based on your roasted butternut squash bisque recipe. Used two small pie pumpkins. It turned out great! Added some smoked gouda. Treated it like a tomato soup and used it for some grilled cheese dunkin'. My wife loved it and she's not much of a soup person.
When you talked about knowing when pancakes are done, I remembered how my mother never made a pancake in her life, because she was an alcoholic, didn't "believe " in breakfast, because she didn't get up until noon. But my grandfather made me silver dollar pancakes every Saturday, and taught me all of my pancake techniques. Thanks gramps! Love u forever 💓

After a major snafu making pumpkin pie on Wednesday, I realized my oven wasn't heating up correctly. we did buy a new range yesterday, but it won't be delivered until Dec 6th. When checking out canned pumpkin, found that it contains pumpkin and different squashes. Makes a big difference in flavor. We bought some sweet pumpkins, baked them and pureed our own baking pumpkin. The flavor is so much better. Now I'm waiting for my new stove to do more of these wonderful pumpkin recipes. Thanks for sharing your knowledge and talent!

You are absolutely right about baking dressing/stuffing in a pumpkin! I made dressing with dried homemade bread, chicken broth, onion, herbs, and cubes of Swiss cheese. Baked in a sugar pumpkin or pie pumpkin, it was the coolest-looking holiday specialty dish I ever produced. At the time we had three dogs that love pumpkin, so when all the humans had had quite enough pumpkin, thank you very much, the dogs got the rest, and they were happy, too. Of course, the dogs didn't get the stuffing, since it had onions. I love this because I am not a brilliant cook, but baking dressing in a pumpkin makes me look like a fabulous chef. Also, any excuse for another dish of dressing is a good excuse. I brushed oil on the skin of my pumpkin before I started baking.

My Husband and I took a special Texas BBQ cooked turkey and pork roast yesterday and we had very little left for today! They were moist after I basted them in apple cider butter 3 hours on our old back yard grill! They even rested overnight! Only reheating briefly! So today... I'm trying a Louisiana style shrimp and crab dressing with smoked salmon deviled eggs. You inspire me to cook things a simpler way; but following many standard cooking guides! Your pumpkin butter recipe for me will become a pumkin mousse dip when I whip in a block of cream cheese or just poured over the cream cheese block! My elderly friend showed me to put fruit butter in the oven at 200 to 225ish (low n slow) for the final cook down so you don't have to spread it. It's not bubbling, it's just dehydrating basically.

Powdered sugar glaze is great on cinnamon rolls, and you can add maple syrup for a maple glaze 2 tbsp butter 1/3 cup maple syrup About 2 cups powdered sugar Salt 1/2 teaspoon vanilla Melt the butter and mix in maple syrup Add sugar until it gets to the right consistency (I like it just a bit thicker than molasses) Add vanilla and salt

Okay Chef John I was watching a TH-cam video with a lady doing a Jack O'Lantern with an ornamental pumpkin and she cut the bottom off and then took electric hand mixer to the inside to loosen up all those pumpkin hairs, you might want to try that next time, (electric hand mixer).
Note: most pumpkins don’t taste very good. You need PIE pumpkins, which are still not nearly as flavorful as sweet potatoes, or butternut squash. I always make my pumpkin pies with sweet potatoes. I’ve heard that canned pumpkin isn’t necessarily actual pumpkin.

About 1990 I made a pumpkin cheesecake, Kahlua was one of the ingredients. I don't remember where I got the recipe but it was really good.
And it was kind of like pumpkin pie marbled with cheesecake and Kahlua in a 9x13-in pan.

I have found if you put it in a oven safe pot and bake it till done, it's alot safer. I mean the pumkin butter

Please Recommend A Good Substitute for the Cream Cheese( Not a Fan) for the Icing .
