How to make Butter Croissants from Scratch

Here's the recipe for the Croissants:
4 cups all-purpose flour (more for dusting)
1 1/2 tablespoons instant yeast
6 tablespoon granulated sugar
1 1/2 cup warm milk (around 100 degrees)
2 teaspoons salt
1 cup salted, softened butter (for layering between dough circles)
egg yolk for egg wash
In stand mixer, combine half of the milk, all of the yeast and all sugar. Let stand for 5 minutes. Add the rest of the milk, salt, flour and let rise for 1 hour.
Divide dough into 14-16 even pieces. Roll out into small circles. Layer the dough circles with generous butter between. Chill in freezer for 30 minutes.
Preheat oven to 395 degrees. Roll out chilled dough into a large circle. Cut into 18 even triangles. Roll them into croissant-shaped rolls. Place onto a cookie sheet lined with parchment paper. Let rise 30 minutes.
Egg wash with egg yolk. Bake on top rack of over for 20 minutes!

I use to make these a lot and added chopped nut filling or poppyseed filling, even chopped raisin filling to make them into a breakfast treat with coffee or hot chocolate.

A quick tip from a croissant class I took years ago from a French chef... stretch
the dough as you roll into the croissant shape. It’s not just rolling like a crescent roll. I think it adds more layers in the croissant. I have not made at home but they did come out with a lot of layers. Either way they look amazing
