My guess is "because Star Wars", which popularized the greebly-covered "lived in" aesthetic. Before this was a lot more sleek 60s space-race type stuff - the smooth tubes and saucers of Star Trek, the spheres of 2001's Discovery and support crafts. The Star Wars approach makes it a lot easier to hide shortcuts taken during kitbashing, too.

There is something to be said for editing. I like the overall design but more work needs to be done on refining the model.
