Your planned electrical mods are something we have run now for over a year and I think you are on the right track. We have a "mild" Lithium system in the caravan (200Ah Lithium, 420W solar, DC2DC etc) and a bigger system in our car (Troopy) (400Ah Lithium, 50A DC2DC, 3000W Inverter, and just 240W solar). What we do is allow the caravan system to supply the fridge, lights, pumps etc and it works independantly just off solar. But the Troopy system runs a 75L twin fridge and we simply hook the 240V caravan cord up to the Troopy inverter whenever we want 240V in the caravan - for aircond, air fryer, hairdryer, coffee machine, makita charger, etc etc. The big plus is the Troopy batteries get a rapid recharge whenever we go for a drive, which is pretty much every day when away. Puts more power back into those batteries than a heap of caravan solar would, and without the problems of shading and bad weather. And we are not overloading the roof of our caravan with heavy solar panels. So hooking up a cord to the inverter pretty much happens for an hour in the morning and for a few hours each evening. When we run the aircond, it pulls 80A from the Troopy batteries - on hot days we run it 2 or 3 times in the afternoon/evening just to cool the caravan. Simple and it works.
Wow, so much more power in the canopy. Next time we lose power in a storm we’ll invite you around to power everything in the house 😂. As for running the inverter to charge the laptop, best thing we ever did was to buy a 100w USB-C cig plug which charges the laptops so much easier. Just a thought. Great that you are back on the road. Hope the truck repairs are all sorted. Safe, slow, travels. 👍
I don’t really have many tips for getting a job you can work remotely, it would depend on the role and the type or work you do and the company. You just have to keep your eyes open and apply for jobs that can be done remotely. Jobs in admin or project management things like that. Sorry I can’t be more helpful
Yes, we fitted a 40mm Hepvo valve into the plumbing from the shower and it works brilliantly. No more backflow of grey water into the shower. Many vans come with this standard.

Have a look at going overland water filter video, ev and there first video on gluing foam on water tanks. But i am going to glue conveyor belt rubber 10mm.

Hepvo valve under bathroom sink will fix the smell problem. Fixed ours.
