    Ingredients:
    Corn tortillas (either white or yellow, store-bought or homemade)
    Oil for frying and basting (vegetable, canola, etc.)
    Salt
    Any other seasonings
    Tools:
    Pot
    tongs
    plate
    paper towel
    baking sheet
    baster
    Silicone Mat: amzn.to/2tUxyrp or parchment paper
    275 F/135 C for the oven, or 325 F/176 C for the oil

    Hello and welcome back to In the Kitchen with Matt, I am your host Matt Taylor, today I am going to show you how to make homemade tortilla chips, 2 ways. This recipe for tortilla chips is really easy to do, super simple, if I can do it, you can do it, let’s get started. All right so both ways, we are going to bake them and we are going to fry them, so both ways are very excellent, for the baking method let’s go ahead and preheat the oven to 275 degrees Fahrenheit. And then we want to have a pot of oil for the frying method, and we want to heat the oil up to 325 degrees Fahrenheit. Now I have two stacks of corn tortillas here, these are premade tortillas that I just bought from the store, they were really really cheap, and you can make your own, homemade corn tortillas if you like, I am not going to do that with this video, I will probably make another video where I make homemade flour tortillas and homemade corn tortillas. All right so let’s go ahead and prep these, so I am going to take this little stack, take a nice sharp knife, and let’s go ahead and just cut it down the middle, like that, and then, what we want to do is we will turn it and cut it down the other middle, and then we want to cut these down each middle again to form our chips sizes. Boom just like that, really simple, now these are pretty much ready to go, I am just going to go ahead and put these ones, these are the ones I am going to fry, I am just going to go ahead and put them in here loosely, all right so like that, so you just put them in a bowl or on a plate, so these are ready to fry I am going to set these aside. And now for the ones we are going to bake, essentially we are doing the same thing, but we are not frying these in our oil, I am using vegetable oil, but you can use canola oil, olive oil, just anything that has a fairly high heat content, um for these ones that we are going to bake, I am going to take some oil, this is vegetable oil. And I am just going to go ahead and baste it on this side lightly, turn it over and baste that side, and then, now you can do that with all of them and then stack them and cut them, I am just going to show you how to do one of them, then we will go ahead and do the same thing, okay and at this point you can go ahead and season them with salt, or you can do it afterward, and now what we want to do is I am going to take a baking sheet, and I have a silicone mat on here you can use parchment paper, and I am going to go ahead and just lay these out. All right so these are ready to go, now what we want to do is we want to bake these in the oven, 275 degrees Fahrenheit, and we are going to bake them for about 8 to 10 minutes, and then we are going to flip these over to the other side and then bake them for another 5 to 10 minutes, so they will get nice and crunchy, okay on to that step, with these, and then in the meantime, we are going to fry up our other chips. Okay our oil temp is right about there, 325 Fahrenheit, now what I did is I just set my oven, stovetop to medium heat, and then it took about 10 minutes for the oil to heat up. All right now what we do is go ahead and grab some of these, chips and it is going to start to bubble like that, just put them in, we don’t want to crowd them, and then they are going to crisp up, and they will get a little lightly golden in color, and we want to make sure to kind of turn them over too, it won’t take very long, so it will take about a minute per side...

      In my opinion both fried and baked tortilla chips tastes good but baked is more healthier than frying.

      You might want to make your own tortillas. They are super easy, and you can just omit the salt

    By watching u bake, make, create food in the kitchen. Using the oven, in which I call it the fire dragon. I was ALWAYS afraid of the fire dragon. U showed me not to be afraid of it. Gonna try the homemade tortilla chips in the oven. Matt ure AMAZING!

      lol fire dragon...that is awesome! :) Just wait until I build an outdoor brick pizza oven, now that will be a real fire dragon! lol :) And thank you! Yes please try them and let me know how you like them. You can adjust the temperature as needed or length of time, they are pretty forgiving chips to make.

Frying and baking produce two different textures I think we like the baked better....one liked fried initially but when it came time to make a second batch they wanted baked so baked is basically the winner...baking is easier too because you just sprinkle whatever seasonings you want on top and then it bakes you don't have to add it after you fry it so basically it saves time.

    I tried the baked version (substituted salt with True Lime) using Mission carb balance whole wheat tortillas and made chicken nachos. It was VERY good. Confession: l baked them on 230°F, 8-10 min per side, then switched to a low broil ONLY b/c l realized l wasn't listening to the instructions too well. Ha! I also used a pizza roller to cut the tortillas.
    Thankfully, it all worked out.

      I know right??? crazy....Who knew you can turn an egg into an omelette. Who knew you could turn and apple into a caramel apple. Who knew you could turn potatoes into potato chips, french fries, baked potatoes...and the list goes on and on. lol :) But yes this is just a super easy version for tortilla chips from pre-made corn tortillas. As stated by the title "easy tortilla chips recipe" It doesn't say "From scratch".

    Try placing them on a cooling rack to maintain crispness. You can place a towel if you’d like.

      You certainly can do that. But the way I do it they stay crispy super long.

    Do you think they could be fried in an air-fryer? With just a very small amount of oil, just like you would do to fry regular french fries.

      Yep! I think so. I haven't experimented with my air fryer yet. But yes! I think they will taste somewhere in the middle between the two versions I show in the video. So very good, I should think. :)

    I used the oven method at 275 Fahrenheit and I had to bake them longer than 10 minutes, is it supposed to be at 375 Fahrenheit?

      You bake the first side for 10 minutes and then turn them over and bake them for another 10 minutes. :) 275 F is correct. I mention it at 3:10 in the video. :)

      lol. Well, this is really only if you have a bunch of leftover tortillas laying around and want to do something different with them. So many different styles and flavors of store bought chips to buy. But they are fun and easy to make! Not something I do all the time though.

    With the frying in oil do you keep the oven on medium when you put them in?

      It just depends, ideally you would use a candy thermometer to monitor the temp of the oil and keep it right around 320 to 330F. You don't want the oil to get too hot because it will burn the chips.

    I didn't have a brush to baste the tortias with, so i put a little on a spoon and spread it with that, then i seasoned it with maybe a little bit too much of salt, snd put it on each side at 275 degrees for 10 minutes. They wernt crunchy and i wanna know if i did something wrong, did i have to wait a bit longer after taking them out?

      Yes it sounds like you just needed to let them cook longer. A few more minutes per side.

    Both worked well, I do it because impossible to buy them without so much salt. Food manufacturers are a disgrace

      Yep, of course! And if you want them spicy a bit of red pepper or something. :) Lots of options, especially those popcorn seasonings, ranch, cheddar, etc. :)

      Yep you can make them in advance and store them at room temperature in a zip lock bag or something or airtight container.

      Follow the same steps with your homemade tortillas. I make my tortillas in a skillet. Once the tortillas are made, then you can follow the steps in this video. :) Good luck! Let me know how it turns out.
