I'm Boone Bake.
When I went to the supermarket, my favorite melons and apple mangos caught my eye.
So, I made a jelly cake with melon and mango after a long time.
I also added dragon fruit, which goes well with cheesecake, and the texture became an art.
I made cheese balls in a round shape.
The mold is actually for freezing ice.

237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
1 egg (without shell) 53 g
Heavy Cream (38% milk fat)
(Chocolate is minced, flour is before sieving)
● Cake finished size ( 15cm * 15cm * 8cm, 1 piece )
● Melon Mango Jelly Cheesecake
(Mold size: 15cm*15cm*8cm)
105g Graham Cookies (Small Pieces - 27)
13g sugar ( 1Tbsp )
55g unsalted butter ( 1/4 cup )
320g cream cheese ( 1 cup + 1/2 cup )
85g unsweetened yogurt ( 1/3 cup +1Tbsp )
65g sugar ( 1/3 cup )
12g lemon juice ( 1Tbsp )
13 g powdered gelatin ( 1 Tbsp + 1 tsp )
65g water ( 1/3 cup +1tsp )
300g heavy cream (60% whipped) (1 cup + 1/4 cup - before whipping)
60g mango puree (1/4 cup)
● Lemon Jelly
30g gelatin leaves ( 3Tbsp )
530g hot water (2 cups + 1/4 cup)
135g sugar ( 1 cup + 3 Tbsp )
25g lemon juice ( 1 Tbsp + 2 tsp )
(* When using powdered gelatin ...
30g powdered gelatin + 150g water + 420g hot water)
