I've done the brisket pastrami, but sometimes too big of chunk...this will be PERFECT since I can find tri tip in smaller sizes. Thanks for the info...on my 'to-do' list for the weekend! :)
Nice! I've just added Tri-Tip to my shopping list. Will probably do two: one for sandwiches and one cooked to falling apart doneness. Currently I've got spare ribs in the smoker. With the (lack) of air quality here in the Columbia Basin, I almost don't need to run any smoke...

Oh yeah. We've got that smoke down in the valley as well. I have a pork loin out in the smoker today.
That smoke was nuts, we went out to the rod run in Long Beach, the light off the ocean was eerie.

I like this one a little better for the fat marbling, but they are both great.
