Somjit, next time you can try our Cantonese style of making this soup. You can pan fry some dried prawns to aroma then add in some chopped garlic then boil and simmer in water for 5 mins, add in seasoning -- salt, pepper, stock powder, then pour in the sweet loofah, and some washed tong chai / Tian Jin Preserved Vegetable 天津冬菜 just to remove the sand, don't wash and wash so that the aroma will not washed away. Once boils again, count 10, then pour in the well seasoned eggs, just like you did and quickly off the fire. Count 10 then stir once. Done. The loofah and egg texture are totally different. If don't want to use dried prawns for the stock, follow your recipe but we never use oyster sauce for soup, but fish sauce is great. Happy Cooking, I just cooked this soup for lunch today. 🤭🤫
