In a Florida card room we are gambling against a banker. It is a separate entity from the room. The room is paid a “rake “ or service fee by the banker each hand. That is how the card room makes money. Any individual can be a banker as long as they bring 60k to the table. Different energy than a casino because the house or dealers want you to win.
