You're not alone with your chocolate chip cookie preferences, Erin. Link from 'Good Mythical Morning' also has stated he likes them chipless. He actually said something pretty similar to you when queried by either his co-host or one of the other members of the team who were like, "So, a sugar cookie...?" He had his wish granted on an ep of 'Mythical Kitchen' where one of the chefs made him a chipless choc chip cookie and he was very happy :)

Oatmeal raisin are my absolute favorite ever.
I say the same thing about wanting a chocolate chip cookie without the chocolate chips because it’s different than a sugar cookie LOL when I was a kid I used to take the pre made cookie dough and take out each chip and bake that because I wanted that cookie 😂 also it’s not the same when I try to bake them myself. I specifically want the premade dough flavor and I just can’t seem to replicate it 😂😂

I worked at The Great American Cookie Company back in the day (it was still called the Great American chocolate chip cookie company back then). If you have one local, you should try them! They have a chewy pecan cookie that is to die for! The cheesecake brownies were my favorite when I worked there. The crust is made from chocolate chip cookies😉. The double doozies are a must! That's where I learned the ins and outs of decorating cookie cakes.
I googled and I don't think they're local!!!! SO SAD!!!!!
The Great American Cookie Co in our mall closed in 2020 and a Mrs. Fields popped up in its place...I miss those double doozies!

My mom and I used to watch Debbi Fields’ tv show when I was young and then my first job was working at Mrs Field’s cookies. I applied because I loved their cookies and got hired on the spot. It will always hold a very special place in my heart 🫶🏼

@ErinRobinson I'm in so cal too! But there is a great American cookies store in San Diego (Chula vista). There is also one closer to the LA area but not too close as it's in Temecula. That one just opened! I live in Victorville but I am definitely going to drive all the way to Temecula to try it out when I get a chance! Also just like some mrs fields have a tcby attached to it (a yogurt place), some great american cookie stores have the marble slab creamery attached to them. I hope we both get to try the great American cookies place soon!

So chocolate chip cookies usually have a combination of white and brown sugar in them. Sugar cookies just have white sugar. SOOOO a chocolate chip cookie without chocolate chips IS different than a sugar cookie.

I have a severe egg allergy and probably can't eat anything from Mrs. Fields... Don't care love Erin and her content ❤🤗. You can flash nuke your cookies in the microwave for like 3-5 seconds to get them back to the gooey fresh out of the oven texture. Also the sugar cookie tasting a lot like cinnamon make me think it's really a snickerdoodle or just stored next to them or the oatmeal raisin cookies making them absorb some of the cinnamon scent/flavor because it looked like a regular sugar cookie. Also Erin a chocolate chip cookie batter uses brown sugar vs. just white in a sugar cookie batter so the naysayers can hush because you're right they are different. The first two brownies looked dry to me but the last two looked perfectly moist. My late Mamaw had a no bake peanut butter cookie recipe that I cherish and even if your Mom's weren't perfect they'll always bring up good memories of her making and sharing them with you. I found a vegan gf premade oatmeal and dried cranberry cookie dough which was so tasty I was mad I only bought one pack to try. The "eat me" cookie reminds me of Alice in Wonderland. I hope your husband helped eat some of those cookies so the didn't give you a tummy ache.
