Tiny Teal Terror They are essential the same character. However, Gannondorf is the official name dubbed to the “human form “ of the character and Gannon is essential a large boar-like creature which is considered by some as the character’s true form.
Ganondorf is the decent of demise that first appears in ocarina of time he is the human incarnation of ganon. Much like Zelda is the human representation of the goddess Hylia

I can see you haven't played Mario Odyssey, so allow me to do the honors of explaining the plot.
Bowser kidnaps Peach (again) but this time for a forced marriage. Mario tries stopping him once again, but fails, and gets launched into a mysterious place called Bonneton in the Cap Kingdom.
He eventually regains cautiousness, inevitably startling a magical hat creature totally creatively named Cappy. He catches up to Cappy, only to realize Bowser not only still has Peach, but has also kidnapped Cappy's sister, Tiara.
The two agree to team up to save the damsels in distress, but Mario notices something's missing. His hat was shredded into pieces when he was sent flying from Bowser's airship.
Luckily for him though, Cappy had the remains of the hat, and not only restored it, but also became it.
Cappy was now a way for Mario to posse- I mean """""capture""""" certain creatures and objects. With this new ability, they finally begin their quest.
