I think the main reason the water is not destroyed by TNT, is that water and lava in fact have a very high blast resistance (100), which is more than 6 times the resistance needed to completely absorb a TNT explosion (15.534)
and the reason sands drop is probably because water is not a full block

When you break the water, it spawns a lava but it realizes it has to spawn a water so it does but it doesn't break the lava, therefore making it obsidian.
Everyone, even the bee, is awestruck by all of this.
I think the reason why it was changing between lava and water at the end of the video, is because it was shown earlier that when you try to break a block of a fluid, it just regenerates, but as the code implies it was the other block, it regenareted the other one. Not sure though

like if you break lava it will replace with lava
but it replaces with water because lava and water has switched
and that's why if you break lava you get water
lava tries to replace itself with lava but because it switched, it replaces with water

The reason the water fall worked was likely spawn protection, it worked shortly after you dying twice but not when you hadn't just died.
