On popular demand, sharing another quick Saurashtra special dish - Rasiya Muthiya - It’s sour n spicy dish cooked with buttermilk.
Made from rice, curd, wheat flour, buttermilk and few spices.
Method:
Take 1 cup cooked rice and soak it in 3 tbs curd for about half an hour so that rice gets sour taste
Add 1/4th cup wheat flour
Add 1 tbs Semolina (Suji / Rava)
Add 1 tbs besan (Gram Flour)
Add 1/2 tsp Turmeric Powder (Haldi powder) and 1 tsp Red Chilli Powder (Mirchi Powder)
Add small grated ginger and a chilli chopped
Add salt
Add 2 tbs oil
Add little water
Mix everything and make very soft dough
Apply little oil in your hand and make cylinder size muthiya
Place them in a greased plate so that they don’t get stuck
Now take a deep pan
Time to give a tadka to buttermilk
Take little oil in the pan
Add some cumin seeds
As it crackles and a pinch of asafoetida (hing)
Add chopped grated ginger and garlic chopped
Add 1/2 tsp Haldi(Turmeric powder) & some chilli powder
Add thin butter milk (1 cup curd mixed with 1.5 cup water)
Keep stirring else curd will separate
Add salt
Cook on medium flame
Once it gets a boil; add muthiya one by one gently
while adding muthiya, gas should be on high flame else muthiya will break down.
keep stirring very gently
As muthiya gets cooked; it will start floating upwards
Stir very gently
No need to add extra besan in buttermilk; just cook it for 10 minutes
heat will cook muthiya in buttermilk
Keep moving them gently; so that don’t get stuck at one place
Taste the muthiya after 10 minutes; and if muthiya doesn’t stick to your teeth; it’s ready
Rasia Muthiya is ready
It’s a complete meal; you can enjoy just like that or have it with some rice or chapati

How is it even possible? It gets cooked in watery buttermilk.. even it was hard it would have become soft. Please check ur measurements dear
