    Great video and great teaching here. On vacation and the beach house we rented has a Big Green Egg. I needed to learn how to use it and this video was the ticket!

    Thanks ! I have been outside grilling myself in the sun and my lil egg is at a constant 200. You help me dove the problem! My wings are at a steady 400!

    I currently work at Ace, I’m an authorized big green egg dealer. I love the egg, this is a great video to learn how to use the egg. I’m gonna suggest this video to all the new egg owners I sell to. It’s one thing to explain it to potential buyers, but videos like this go a lot further than an in store explanation can do.

    can you use the egg in a screen enclosure . Meaning will the heat from the top reach up to the top screen and melt it

      I would not use the egg inside a screened in enclosure. Better to keep it outside and away from anything combustable. Chef Jason

    My egg is so old it does not have a screen. I have had pretty good results with sneaking up on the target temp instead of going above it and then cooling it down...it takes forever for the temp to drop. But that is just my observation.

      I like to get the fire burning string and have a well established ember pile, then go to work. I think both ways work and at the end we get some solid food to eat too. You may be able to contact Big Green Egg and get a screen to add in, if you are looking for one. Happy Cooking, Chef Jason

    Screen is a spark arrestor. Not a choke. Keep it closed.

    I recommend keeping the screen closed. It’s there for a really good reason.

      So many different ways too use and adjust this grill. If your grill sits on the deck, that screen is a great spark preventer. Mine sits on concrete for that specific reason. thanks for watching

      5280 Culinary - Chef Jason Morse Just because your BGE is on concrete doesn’t mean there isn’t a danger of embers causing a house fire. Just ask Chris (aka NatureBoy on the BGE forum) who owns DizzyPig BBQ company. His house burned down after an ember came out the lower vent and blew into his garage. You may want to reconsider telling BGE customers to leave the screen open. Just saying..... I enjoyed your video and love your passion. Keep on Egging!

      Mike Winanz I would go about 2/3 open with the flap of the screen is 100% closed. Again, I like to allow good airflow in and choke it off at the top and better control the temperature. Happy Cooking, Chef J

    Wouldn't you get sut on your meat if you have charcoal that is lighting up for the first time as your grilling?

      It’s seems to be a bit of a challenge to control the temperature. I have a large Egg. When cooking indirect my meats seem to burn or cook to fast. My whole wings for the last holiday was almost a train wreck lol!! I was able to salvage a few lol!!! I’ve purchased new thermometer and other egg products as we’ll.
