Black Bean Fajita with Pasta

  • Makes 12 x heaped 1 cup portions
    4 red bell peppers cubed
    1/2 red onion sliced or cubed
    1 x 28 oz can diced tomatoes
    2 x 14.5 oz can black beans, drained and rinsed
    1 x 14.5 oz can corn with liquid
    4 tsp chili powder
    2 tsp cumin
    2 tsp paprika
    2 tsp kosher salt
    2 cups vegetable stock
    4 cups of Orzo pasta
    1 lime
    Combine all ingredients and bring to boil and stir it, or it will burn to the pot.
    Reduce heat and summer for 15 minutes, while stirring it every 2 minutes to prevent it from sticking/burning to bottom of pot.
    Use juice of lime to season it before serving.
