how do you prepare the onion (i.e. how thin do you slice it)? do you leave the gel of the tomato in, or do you find that that leaves the sandwich too wet? i'd love to see footage of the sandwich prep and assembly. you asked for suggestions, so: i'd suggest some blackberry jam (not sure if you call it "jam" in the UK) and brie! or maybe fig preserves instead of the blackberry. lots of cheese-and-jam combos to consider, really - gouda and lingonberry works well, i think. more ideas - what you've got here, plus some bell peppers (i think you might call them sweet peppers), garam masala, and kashmiri chili - let that sit with the tomato and onion for a while before assemblage with the cheese. and you can't go wrong with some kimchi, mature chaddar, and a bit of kewpie mayonnaise - i'm sure regular mayo works well, too.

I just sliced the tomato 🍅 as it is, i usually use Roma tomatoes. That's what we call them in Australia, mate.
