How to make 1940's Meatloaf | Dining Through The Decades Episode 3 Season 2

  • Hello Darlings! In this weeks episode we make a classic meal, Meatloaf! This recipe is from 1943 from a WWII Ration Cookbook called "Recipes for Today" which was published by the General Foods Corporation in the USA.
    I LOVED this recipe, the Meatloaf tasted absolutely delicious! Don't forget to let me know if you try it out too!

    Family Meat Loaf (1943)
    4 cups Post's Corn Toasties, or 3 cups Grape-Nuts Flakes or Post's 40% Bran Flakes ( I used 2 cups of breadcrumbs and 1 cup of Shredded Wheat cereal)
    2 pounds ground meat
    1 egg
    2 teaspoons salt
    3/4 cup chopped celery
    1 tablespoon minced onion
    1/2 teaspoon sage
    1/4 cup chopped celery leaves
    1 tablespoon chopped parsley
    1/4 teaspoon pepper
    1/4 cup ketchup
    1 cup milk or stock
    Glaze
    1/4 cup packed brown sugar
    1/4 cup ketchup
    1 tablespoon prepared mustard
    Method
    Crush cereal flakes slightly.
    Combine remaining ingredients in order given; mix well. Add flakes.
    Mix glaze in seperate bowl, stir to combine.
    Pack into greased 9x5x3-inch loaf pan. Pour glaze over the top of loaf.
    Bake in moderate oven (375 F/ 190C) for 1 hour and 15 minutes.
    Makes 8 to 10 servings.
    ( I made some additional glaze to pour over the finished meatloaf and that made it SO delicious, I highly recommend it!)

    Looks wonderful! My grandmother and mother used oatmeal in meatloaf, and canned tomato soup instead of milk. Of course my grandmother had lots of fresh tomatoes from the garden so they made and canned their own tomato soup. And added Lea and Perrins Worcestershire sauce for additional flavor, with ketchup on the top!! I still make meatloaf like this today (68 yrs old)!!!!!!

      My gran also used oats and Worcestershire sauce in her meatloaf. She’d serve it with mushroom gravy and baked potatoes!

      Besides the ketchup and Worcestershire sauce, try adding a squirt of mustard and a tad bit of brown sugar for a tangy topping! Yum!

      @@annek1226 yes! My family always used Worcester sauce, garlic and onion powder, sometimes brown sugar, and a tablespoon of dry mustard. We would make a mixture of ketchup and tomato paste with a dash of hot sauce to put on top and it always turned out so amazing.

    Meatloaf is the best; I didn't know Brits and Australians knew it existed. Meatloaf and mashed potatoes--my fav meal.

    I like the way you used the shredded wheat and bread crumbs. You used what you had. That is what a WWII era cook would have done also. :)

    As an American recipe, I bet it would have been yellow mustard. So it wouldn’t have been spicy.
    I love to grate my onions for meatloaf. Saves my eyes too!

    My family’s meatloaf is the one once printed on Lipton’s Onion Soup Mix in the 1970’s. I found it online and recently made one with the same Lipton Onion Soup Mix. Oh, it took me right back home to the comforts of my childhood. Those were the days!

    Great video! I grew up eating meatloaf weekly and it’s so nostalgic and comforting. The mustard called for in an American cookbook would have been prepared yellow mustard like French’s, which isn’t hot, so the amount listed makes more sense. Keep making Dining through the Decades videos, please!

    Hello from Texas!! My mother always used corn flakes in hers, I use oatmeal, may try corn flakes again to see. I add an envelope or 2 of onion soup mix to mine and use a similar glaze with kids, kids see onion and go "eeww". I use just plain mustard, ketchup and brown sugar. Hub loves that glaze as well.       My own mom didn't like big onions pieces so I would stick them in the blender with the milk and she had no clue, I had done that with other picky eaters as well.

    Thank you so much for a new season of cooking! I am amazed how "beefy" the meat substitute looks! The recipe is exactly the one in my Mom's recipe box from her 1940's youth, but in her copy the glaze recipe is included and has the name Piquant Sauce which included a bit of nutmeg. That said, Mom never totally followed that recipe. She used Saltine crackers and no added salt, no milk but more eggs, no loaf pan but formed it on a baking sheet so the fat would drain off the fatty cheaper ground beef, and for the glaze she used Heinz Chili Sauce with some green pepper (capsicum) sliced on top. In true Mid-Century dining we had sides of Jello, salad and buttery mashed potatoes, then sandwiches of it the next day. Fond memories, and now hungry from watching the video!

    I just made your 1940s meatloaf recipe it was a wonderful hit my whole family loved it I will probably be making it like this all the time now I think you and your husband are just adorable please keep making your videos I really enjoy watching them I'm 58 years old from the United States and it reminds me of my grandmother and my mother in the pictures that I've seen of them back in the '50s and in the 40s even in the 30s we have and beyond just wonderful wonderful memories that you bring back to me I love your renovation shows and you're cooking shows and how you do your hair and your dress it's very lovely to see a beautiful young lady looking like a beautiful young lady these days thank you so much and keep making the videos please ❤️😘🌹

    I really enjoy watching dining through the decades. My mom use to make meatloaf all the time and we use to make our self a meatloaf sandwich and it was pretty good. :)

      We had mashed potatoes and brown gravy with my moms meatloaf too but my grandma made a ketchup glaze for hers with ketchup brown sugar and then crisscrossed bacon on top.

    That is the glaze I always use for my meatloaf!! It is how my grandmother made sloppy joes for us as kids, (brown sugar, ketchup and mustard) and I get so nostalgiac for it!

    I just made this recipe and it's INCREDIBLE. I used Just Egg (vegan) in place of the egg (3 tablespoons equals one real egg) and soy milk instead of milk. I did add some extra onion. I used half crushed shredded wheat and half store bought bread crumbs. And she's right, make extra glaze, it's really good. Wow!! If you're thinking about making this - do it!! 😍

    Very cool 40's wartime mood. Also, a great-sounding meatloaf recipe.
    Very much like the recipe used by my mother, who was an American lady cooking meatloaf during the Depression/World War II. She never lost the habits of those trying times.
    The bit about greasing the pan really brought back memories of my childhood (one of my chores). Thanks for your contribution!

    I was sitting here wondering, "what am I going to make for Thanksgiving?". I'm not big into Thanksgiving but everyone else is, and being a vegetarian can make it difficult. Then I remembered you made a meatloaf! I haven't had one in years, and I have decided I am going to make this for myself.     I've made it very similarly to this, for a long time. I was raised on meatloaf made with saltiness or oats, I do it that way sometimes. I love meatloaf, and love leftover sandwiches. 😋 thanks for sharing this. 👌 Liz in California 🇺🇸

    The meatloaf looked delicious. We have meatloaf at least once a month, would have it more often if up to my husband. The glaze is what makes it so good to us too. We have any left overs as sandwich's, or with some salad the next day. Enjoyed. Thanks.

    Meatloaf in the US is often a mix of ground (minced) beef and pork. You can use a variety of things for the carbohydrate portion, and I like the very versatile bulgur wheat. It often comes with brown gravy, in restaurants, but I much prefer a tomato based glaze.

    ❤meatloaf, and every family had their own version. I can't believe you greased the pan! Maybe for fake meat, but NEVER for real meat, especially since you would be using a lesser grade of meat. My mother never used sage either, that's for poultry to my taste buds; thyme was the herb. You are totally correct to use all of the celery, my mother would be upset to toss the leaves. Mash potatoes (with just enough lumps), and green beans completed the meal.

    Hi, I appreciate watching these types of shows. I ate this way as a boy.
    My humble advice:
    Use a chefs knife, it rocks much better and you can scoop up the veggies with it.
    Place torn up bread on a cookie sheet and toast on the oven.
    Mix all ingredients with your hands not a spoon.
    Use ketchup with brown sugar or BBQ sauce on top.
    2 strips of bacon on top will really be a game changer.
    I hope you don't mind my input. Best wishes

    This was my mother’s original recipe. She noted “good” by it in the cookbook, but above good it says “old recipe”. I had her new recipe and lost it. It was good. Mom always took her spaghetti and put it in a casserole dish then added the meatballs and sauce. This way the sauce covered every inch of the spaghetti. My family topped it off with Parmesan cheese. I put catsup on mine. I figured a meatball is like a burger and needed catsup. Lol.

    The way my mom made her sauce was ketchup, tomato sauce, brown sugar and dry (ground) mustard seasoning. She always had to make extra so we could have it with out mashed potatoes because we loved it so much.

    That looks so good! I use the vegetarian mince as well. The part with the mustard made me laugh because in USA plain mustard is just tangy, not spicy. And I make that glaze quite often. Bbq sauce is good too, inside the loaf as well. I want to check my vintage books for barbeque sauce recipes now lol

    Mmmm that looks delicious! I think I know what make for dinner tomorrow lol. My dad uses rice and breadcrumbs for the binder. He also adds Italian seasoning and tomato sauce. The glaze was just ketchup and brown sugar, it really did make it all come together though. Since I'm not a fan of onions he always makes a separate one for me without onions and serve it with mashed potatoes. Such a nostalgic meal.

    My mom was born 1926 (depression era baby). Grew up on a farm. The only thing from the farm that went to market was excess milk. They were not restricted to the livestock they raised and the consumption of same (family of 9 children). Grandma kept a "kitchen garden" and grand daddy managed the orchard for fresh eating as well as canning (or cold storage of apples, taters and onions). Grand daddy butchered the beef cattle and pigs when it was slaughtering time and then smoked the meats (they did not have a freezer at that time, they were lucky to have a refrigerator, such as it was). Chicken was slaughtered as needed ..... and only if there was an old hen who was not laying much anymore ..... and she got stewed. Mom said they ate pretty well. Where they were effected by the rationing was clothing.

    I made this for tonight with potatoes. I use dry jarred herbs. Also I use oatmeal as the binder. You don't need celery but I do suggest a dry onion soup mix like Lipton or Knorr brand. That adds a lot of flavor.
    Mix with clean hands. Don't use a spoon. That's the only way to properly blend. Please no milk! Use no liquid but the egg! Top with ketchup.

      My moms standard was ground beef, little milk, egg, Italian seasoned bread crumbs, onions and ketchup. I still do this, so yummy.

    This recipe is so nostalgic. Just how my grandma used to make it! She always turned it out of the pan and added the glaze last and broiled it. Nothing quite like grandmas meatloaf!

    I use a bread pan as a mold and bake in an oblong cake pan. 13in X 9in. That allows the grease to cook out of the meat loaf. and makes collecting it for the gravy easier. And more crust.....the best part

    What my Father taught us was to dry out celery leaves in-between an old newspapers. That way when you couldn't get fresh celery you had that on hand. Warning the leaves, have a stronger taste when they are dried.

    It looks very good, for some reasons, i always loved meat loafs. Its a comfort food. My mother used to make meatloaf when i was a child. Their are so many ways you can make it and had some vegies and i have a recipe that i really like and living on my own, i make it in those muffin trays, so i can freeze some and just take out the amount i want and put it in the toaster oven.

    No animal was harmed to fill your plate and looks delicious. If I could love this video, I would. I used to be a vegan, but got so ill and would be hungry all the time as a veggie. My ex convinced me that I need meat, but I think I just need to study nutrition, then I would be able to eat 'guilt free' and be healthy. I'll work it out one day. Your content is a breath of fresh air, always cheers me up. Thank you. 💖

    I started watching your videos about a month ago and am obsessed! You are just so adorable and I love how you just tackle new projects and recipes. I made this meatloaf last night and my husband and I really enjoyed it. We still like my savory meatloaf better, but this was a nice switch up. I had to laugh when you mentioned how much mustard the glaze recipe called for and you were like, “Um, no!” The same company (Knorr) that put out the meatloaf recipe I use (except I use half ground beef and half ground turkey) also put out a recipe for chicken and called for 1/3 cup mustard. I was very new to cooking and loved their other recipes, so I just put 1/3 cup of mustard into the bowl. The house stunk SO bad, and our eyes and lungs were burning! We had to leave the house for hours.

    thank you so much for the recipe! I'm gonna try it. Money saving tip: I like to roast potatoes or bake bread while making a meatloaf--the oven is already hot & running, so it saves time and money to cook something else in the oven along side the meatloaf.

    Love the topping. It’s what we grew up with. My mom would use dry, powdered mustard to the topping, and put strips of bell pepper on top. I still make it, but a vegan version!

    Classic Meatloaf.....1.5 lbs of Ground beef, chopped onion, 1 can of tomato soup, few splashes of Worcestershire sauce, 3 tablespoons of brown sugar, few squirts of yellow mustard, 1 egg, 1 cup Italian Bread crumbs. Mix together. Form into small roasting pan. For the Meatloaf topping I mix 4 tablespoons of brown sugar, third cup ketchup, few squirts of yellow mustard and Worcestershire sauce. Spread evenly on top of meatloaf. Stick covered into oven at 375. Cook for 30 minutes. Then cook for another 30 minutes without the lid on. Serve with potatoes and salad.
