Scottish Lorne Sausage

  • Scottish Lorne Sausage on my Scottish morning rolls.
    Recipe:
    750g minced beef
    750g minced pork
    small glass ice cold water
    1 1/2 tsp nutmeg
    1 1/2 tsp ground coriander
    1 tsp salt
    1 tsp ground white pepper
    1 tsp cyan pepper/paprika (optional)
    loaf tin that will hold 1.5Kg sausage meat.

    Good effort on the sausage. It was trial and a wee bit error when I first started making it. I use ground black pepper instead of white pepper, but for sure, fat content is the key to this style of sausage.
    My old family butcher in Scotland offered a bit of advice and said if your meat content is on the leaner side (supermarket meats) then get some pork belly fat and mince it up. I also put mine in the freezer for about an hour, slice and individually wrap them and freeze what I am not using.

      Hi, absolutely, I'm trying to lose weight so I'm keeping the fat down, in saying that I use bacon lard to fry it in, the flavour and texture is perfect though, I also remember as a kid if you bought this from a butcher after frying it was only half the size, this was due to the fact that it was made using the fatty offcuts and bits unsellable. I believe in the 90s the government introduces changes to the law relating to meat/fat content in products, my local bakers (Fords) of mussrlburghs scotch pies changed for the worst. Fat = flavour, eg the fatty eye in a rib eye steak, a tast sensation.

      Oh yes I individually wrap and freeze, I find the consistency better after freezing too. Yip putting in the freezer for about an hour helps with slicing.

      Probably need to use the plastic film glove,instead of the white glove Michael 😂.

    I made a batch of this and what got me was it had a fishy smell when cooking but tasted ok but Cumberlands take some beating thanks Paul.

      Hi, your welcome I'm not sure why it was fishy. It's very strange, I get Cumberland sausages here in Thailand. However, they are terrible. Cumberland sausages would be my last choice even in the UK, just not to my taste, I'm afraid.

    There is no pork in traditional Lorne sausage.

      There is when you live in a country that has beef with no fat on it. The beef also has very little taste. I could try it just using minced pork fat and beef, but still pork fat and still required.
