I'm just catching this video after we've eaten for the day and kids are cleaning! So nice to kick back after a long day. I actually butterflied two smaller turkeys this year for the first time and smoked them with hickory. Turned out delicious! My brine yesterday was different though, started with apple juice, whole cloves, rosemary, sage, thyme, onions, apples, cinnamon spice, brown sugar and a dash of a few other ingredients. Brined over-night and then on the pit today by 11. Done at 2. Great turkey.
Great job as usual. That turkey turned out great. Those drum smokers really do the job. I cooked ribs and a small turkey breast today on my PBC and everything turned out great.

watch a bunch but had a question....I have a bbq guru and gateway as well. Does the second intake need to be closed while the guru and fan are in use? Thanks. Great show!
Sorry I missed the question. I went to sleep very early yesterday because i had to cook 7 Turkeys on my Ole Hickory. Which grill did you choose? Both make fantastic Turkeys so i know you couldn’t go wrong either way. Happy Thanksgiving.
3.5 hours between 325 and 350. It was delicious. I have orders in for 6 turkeys this Thanksgiving. I’m going to use the ole hickory smoker, wish me luck! Happy holidays

You will have some smoke escape but nothing to be alarmed with. It seals pretty good even with the probes. The Gateway smokes meats like an offset smoker. Rich smoke flavor yet not overpowering. Love the drums!!!
Awesome video, but I can point out 6 cross contamination that you did in his video, I don't understand why you do stuff like that that is not healthy, and not a good image that you put on TH-cam, great food, great videos, but a lot of cross contamination
@@mimblewimble843 go back and look at the video and you will see several crossing terminations, but I'm not here to start anything, I'm just putting out stuff that people have pointed out to me before when I have done videos, that's why I took most of mine off.
I have not cooked too many birds on the drum and this will be the 1st turkey. Thanks for the vid..
I did this cook on my custom drum smoker last year and we are still talking about how good that turkey was!

Yes. If not, the drum will never stabilize and always try to run hotter than your set temperature. Hope this helps. Thanks for checking out the video.
