    Just wanted to mention that for sauté there is high, low and custom. Custom allows setting between 1 and 6 to have more setting options.

    It was great to see you reading the manual. I actually saw a video on the Evo & the steam diffuser was missing. She didn’t even realize it was missing! Obviously, she didn’t read the manual. I like to watch your IP videos because we seem to like the same IPs.

    Thank you for taking the time to go through the features of this new Instant-pot model and for providing us with such an informative video!!! I’ll be getting one for myself! I have an older 6 quart I got a year ago. And I am not crazy about all of the selections you have to make before actually hitting the start button. The model featured in your video definitely looks simpler and OMG...LOVE LOVE the handles that were added to the inner pot!!!!!! Thank you again!

    Just bought mine today. Have the 6 quart Ultra and the 3 quart Duo Nova. Love the new features of the Duo Evo Plus. Will be cooking your recipes this week. Keep doing what you do. Learning a lot from your videos.

    Thank you for letting us know about this instant pot and all of the changes and upgrades. I love mine and I bought it after I found all your recipes awhile ago using an instant pot! I got my two sisters and our youngest daughter using instant pots now! I won’t be upgrading there are only two of us, but I do also have a 3 quart instant pot, using it mostly for just the right amount of homemade yogurt for the two of us. Thanks for sharing

    Best machine Instant Pot has come up with yet. I'd like to see a touch screen on it as well, as the knob is a little slow in setting temps and times.

    I like all of the improvements you cited, but another feature which made me go for this one is that flat bottom. Not long ago I had just purchased my first IPs (the recent new 6 qt on QVC and a 3 qt Ultra). I had been trying them out and was a bit disappointed that the 'floor' of the pan was not flat - oil ran to the edges and I ended up burning some foods in the middle and when I put it into pressure mode, I got 'burn' errors, even after deglazing, etc. I saw this one and I sent back my first two. I am still working on checking it out, but so far I'm liking it a lot.

    Thx so much for this review. My head was spinning trying to decide which one to buy. I had finally decided which brand pressure cooker i wanted after hours of research only to learn that that brand had a gazillion models to research. To complicate things further Walmart, Costco, and QVC had their own versions too. I couldn’t decide between this one or the max. After your review I decided to go with this one.

    I'm very satisfied with my 6-qt. Lux and my 8-qt. Duo. As we've all heard, the newer models seem to be much more sensitive and give more burn messages. Cross fingers and knock on wood (my head!) I haven't yet had a burn message! I also like that the older models don't have so many things to set like the Max does, and maybe I'm a weirdo, but I happen to like the red LED's and am not so enamored with the light blue screen that I know has to be more readable in real life than it is in any of the videos I've seen. I've never been the least bit intimidated by the old school pressure release. Not that bad! No start button is nice though of course it's not that huge of a deal. I agree with you that most people only used the manual or pressure cook depending on your model, and if one likes and can eat Yogurt, the Yogurt button as well as the saute button. As to Sous Vide, I'm not as interested in that but I have seen videos on how that works. Interesting concept but at least so far I haven't wanted to do that! Thanks as always for your great videos!!!!!! Looking very forward to your cookbook!!!

    *I love the instant pot so much! I have made quinoa, chicken, chili, asparagus **MyBest.Kitchen** and yogurt in it so far. The only thing that didn't work great was the asparagus. I cooked it for 1 minute and it was still overdone. It is a timesaver and uses much less energy than my gas stove.*

    I am still using the original duo and cooking for two so I don’t have a good reason to upgrade yet. But I still may put it on my Christmas list because the handles and the steam release are great upgrades! Thanks Nili for this informative video, I appreciate it!

    I love the handles, the bottom so I can use it with my induction cooktop, vent switch the on the side handle stands. Those things alone are with the upgrade for me!

    I ended up getting it from Williams and Sonoma, too! I waited for it to appear in Black Friday or Cyber Monday deals before opening it up. I’ll have time this weekend to play with it and I can’t wait!! Thank you for sharing all your IP insights and recipes!!

    I meant to say earlier, but thanks for this unboxing and explanation. It did help me make up my mind that I was going to get the Max. The programmable release for me (she who is terrified of pressure cookers because one blew up on my mom) still overwhelmed the benefits of this one. But if I gift someone one it probably will be this model.

    What a great review. I’m considering switching from stovetop to electric. It’s going to be cheaper to upgrade my PC than to upgrade my electric range to gas. I was spoiled by my propane stove, but after a move I can’t seem to find the right temperature that doesn’t burn the crap out of everything I try to cook.

    I love the handles!! That is a huge upgrade. I have 2 6qts and one 3 so I better wait until they go before I upgrade. I must say I wish it had the removable cord. Maybe by the time I “need” another IP they will have that option😉

      I read there are hooks that hold the cord against the base for storing, but agree, detachable is best.

    The New Model Of The Month Club. Kinda makes my head hurt. I have an Ultra 3 and 6 - just added an 8qt Duo Nova because I got it for practically free from Kohls, but I'm digging the size. I want to review your video on the Instant Pot Max - I don't hear a lot of great stuff about it, but it looks sexy. haha.Thanks for the consistently solid, clear content!

    I decided this was the one to buy, so it's on order. Sous vide might actually work in the 8-quart, and I can probably use it and pull out my 6-quart model if I have multiple things to cook at the same time.

    The quick cool is now available online. My two pet peeves. 1.releasing when I have soups or stews with lots of aromatics, turmeric, curry, meat etc... the house stinks up and i hate wasting the time for the slow release. 2) a bigger trivet so I do not burn my hands when steaming a big bowl of soup warm. One peeve down now.👍

    just received my evo duo plus....have not run it yet..this is my 1st pressure cooker so i am a newbie...lookin forward to trying different things......all so received the Ninja Foodi Grill ( LOVE IT ) ...and received the Philips XXL Airfryer....so i am ready to start cooking.....first time with all these machines....i look forward to you using this machine with some recipes.....thx...cheers

    Wow they did some really good upgrades, and like you mentioned.. the handles on the inner top is a big plus. Thank you for video, I may not get it, because a 8 quart is more than i need. I have a 6 quart nova and a mini 3 quart.

    GREAT review Nili, thank you! Currently use (2) 3qt ultras, cooking for one/small kitchen, so the Evo+ is way too big. If released in 3qt, I would definitely buy it for the inner pot handles & being able to reheat on the stove. (Still waiting for the IP duo crisp in 3 qt. Think I would buy over the Evo+, both if I could find space 😂)

      OsakaRose, yes! And would love to get rid of a big honkin' air fryer taking up kitchen real estate! I would even go for a 3-qt CrispLid. Emailed Mealthy today. Response: "We understand that a smaller size would be ideal for some of our customers. We are looking into how feasible it would be to market a CrispLid for a 3-quart pressure cooker, but have no immediate plans to sell one at this time." Either a CrispLid or IP Duo Crisp, if/when, I would buy whichever comes out first, based on Nili's reviews. How about you? Would you go with either or stick with IP? 3 qt is perfect for 1!

    Detachable cable for the European 230V / 50Hz versions:
    The version for Europe with power supply 230V / 50Hz uses the C14 inlet to attach the power cord to the power supply and is comes with both a British and a separate EU continental cord-set.

    One nitpick detail I found is they apparently omitted the high altitude adjustment that the Ultra has, although this machine might be a potential Ultra replacement.

    Love the handles and release button! Did I understand you to say there is a steam without pressure feature now? I would find that really useful as I now often cook veggies for 0 minutes to just steam them.

      Yes I was curious about this too. I have this IP and love it! I was a little confused with this new steaming feature I read. I usually steam my egg bites in my older IP. I haven’t tried in the duo Evo plus. I don’t know if I should use the steam feature. What do you all think?!

    Yogurt program is implemented differently. Download full manual and read pp 48 to 50 if interested. There is now a custom mode with adjustable temperature and time, that you can use for either pasteurization or incubation. The cold start method, you add milk and starter and use Ferment. I haven't tried it yet. But it's confusing because the programming and controls aren't same as Duo , Duo Plus, Ultra, etc. I have no experience with the Max.

      I have been making yogurt in home for last 10 yrs long before instant pot craze. Super easy: 1)Heat 1/2 gallon Milk in Microwave to 185 to pasteurize . 2) Let cool to 110 & add starter yogurt 3) pour into 2 containers of 1 QT each & wrap with a towel. 4) Place in Oven for 8 hours with only thr light on 5)Cool in Refrigerator for at least 2 hours 6) Strain to make Greek Style!

    You rock. Why not do a video on cooking your entire thanksgiving meal in one instant pot. I did that for the last two years. I have an extra inner liner pot. Easy peasy cleanup. Take care.

      I’m hosting 30 for Christmas so I’m going to make a pork roast in my old pressure cooker xl and another pork roast in this new duo Eva plus for Christmas. It’ll be fun to compare the 2. I’ll make crawfish etoufee in my ginormous magnalite pot on my gas stovetop and rice in my old school big rice cooker. Wish me luck!

    I wish you could set if you want to go to natural release and for how long... then give an alarm. I can understand not to do an instant release automatically for safety reasons.

      On the instant pot Max you can set it to do an instant release when cooking finishes or a metered release where it does a spurt of steam every few seconds. I wish they had brought those options over to this model!

    Great informative video! Do you happen to know if you can also use a regular 8 qt pot in this model or do you HAVE to use the one with the handles. I ask because I am replacing my regular 8 qt. Duo that died and I have that stainless steel pot and a nonstick pot. I was hoping to be able to use those in this pot as well. Thanks in advance :)

    Have you tried the bake setting yet? The manual is confusing, but it seems like one can dry bake with the bake setting?

      I haven't tried bake yet... I'll have to look into it! The bake settings on other models is still just a pressure cook setting but IP is always changing things up on us! lol!

    I’m a bit confused. I have an “Evo+ instant pot. As you pointed out, it says in the user manual no pressure cooking vegetables, yet in the menu under pressure cook - broccoli is named. What am I misunderstanding? The menu or the user manual?

    I think if I upgraded to this model I'd have to give away my current 8qt simply because I rarely use the 8qt, but I am intrigued by this model. Especially the sous vide option. Do you think you will video giving that a try? I wouldn't mind hearing your opinion prior to making the upgrade.

      @@IndigoNili - She does. I've watched her almost as long as I have your channel. She does not have this model of IP for her sous vide recipes. Time is difficult. Especially with lots of little ones. LOL I mainly would use the sous vide for steaks myself.

      If you're 100% happy with your current IP, look for a sous vide immersion circulator for $40-$60 or less. 1000w is better than 800w but 800w will do more than the IP sous vide can. It'll circulate, control temp to 1F accurately, and 800w can do 3 gallons of water in a big pot or 12qt sv tank.

      @@PaullaWells There were complaints about the Duo SV that Costco sells, the temperature being really off. I bought a new Duo Plus with sv from QVC, then saw the Duo Evo Plus features and used a gift card toward it. So I have 2 new ones with sv now because it was too late + unethical to return the QVC one. Literally haven't had time to test the sv feature. I thought it might make nice portable SV for 1-2 portions but already have a sv immersion circulator. Look for liquidators selling off palletized returns on Facebook Marketplace. I've bought a lot of small appliances that way. Some were open box, never used. Manuals or something might be missing but either could be replaced or I could get along without it.

    I really want to buy this modell... but i cant find a steam diverter "angle" for it... I know that there is this steam release cover but it doesnt do the whole trick for me...
    With the angle I was able to redirect the steam directly into my kitchen hood :(
    Do you have any idea how i could handle this?

      It was available on Amazon very recently but I also noticed today that the link is not working and the Duo Evo Plus model is no where to be found on Amazon! Very strange! I wonder if they're just getting things changed around in preparation for black Friday... 🤔

    It doesn't come in 3 qt so ordered duo nova to replace my 2 qt CE. I don't get why they call it duo when its more like ultra series, dial i guess. Has anyone ever used a recipe that come in cookbooks. FYI just because you pass water test doesn't mean cover isn't defective. My ultra passed water test but failed when cooking because when you add meat you change the dynamics of the pressure. Problem was in the new pressure release mechanism and took forever to get instant pot to replace lid.

    I recently bought this model and m loving it. However, did the one you reviewed come with a user manual or "starter" cookbook? I ordered mine from Amazon and there was nothing in the box but the IP, rack, and extra seal. The IP is really simple to use but a small booklet would have been good.

      Yes, it should have come with a manual for sure! I would contact IP customer service and see if they can send you one. Or, I believe you can find it on their website

      In my ver brief research, it looks like the Ninja lid can't be removed for cleaning, if that matters to you.

    Thanks I watched your other video about this one too. I would not be inclined to buy these and believe me I have been tempted. Too many issues. And I so want that new one the Pro Crisp but nope. Those air fryer lids are not impressing me no way no how nor the error issues. Too much cash to part with for those issues.

      No the Duo Evo Plus is quite different from the duo plus. The duo plus is very similar to the regular duo so the list I give at the end of this video of differences between the Evo Plus and the regular duo would also apply to the Duo Plus... Could they have made all of these names more confusing?! 🤪

      @@IndigoNili are you sure? it certainly IS confusing!! from what i can gather on the IP website, the duo plus actually has 2 more features than the evo plus... eggs and sterilize.

      @@nick9987 You're taking about pre-sets or "smart programs". These are just suggested cook times and don't actually cook any differently than just using the pressure cook button. I think they're a silly marketing gimick, personally. But if anyone is counting the Duo Evo Plus has 48 digital pre-set (including egg and sterilize) and the duo plus has 15.
