- Add more water to the starch sediment, stir, and let it settle again. Repeat this process until the water on top becomes clear, indicating that most of the impurities have been removed.
#### 8. **Dry the Starch:**
- Once the starch is separated and the water is clear, spread the starch on a clean surface to dry. This can be done outdoors in the sun or indoors at room temperature.
#### 9. **Final Drying:**
- Once the starch has partially dried, break it into smaller clumps for faster and more even drying.
- Continue drying until the starch is completely dry and has a powdery consistency.
#### 10. **Store the Starch:**
- Once dried, store the cassava starch in airtight containers to prevent moisture absorption.

- **Be cautious when handling cassava:** Cassava contains cyanogenic glycosides, which can produce cyanide. While the processing described here helps reduce cyanide levels, it's essential to handle cassava carefully and cook it thoroughly before consumption.

Mr. Eric Dotsey is correct in that one must look to value add to one’s product. Garri and Ethanol are two options which he favors. However, a better option would be cassava starch a.k.a. Tapioca. It will garner many industrial buyers in food and pharmaceuticals. He should have a futures contract prior to sowing his crop. This would assure a guaranteed price. He lacks good buisiness sense. Like many Ghanaian males, he was too condescending to women. The cassava queen was a much more business astute than he. Instead making a enemy of her, he should have made a counter proposal to make her an ally.
