Double Smoked Ham | Pellet Grill Smoked Ham w/ Homemade Ham Glaze

  • Welcome back to Anderson's SmokeShow! Today we are are going to make a double smoked ham on my Camp Chef pellet grill. Top this pellet grill smoked ham with my homemade glaze recipe and you'll have one AWESOME ham for this holiday season!

    ***Remember that time is subjective and that temperatures are most important. If you have a smaller ham you need to scaled back the times and focus on internal temperature***
    The ham that I used was already hickory smoked, spiraled, and fully cooked. Cook times will vary greatly if the ham is not already smoked! Now lets double smoked this Christmas ham!
    The rubs that I used:

    I chose to use the B&B Championship Blend pellets for this smoke. We started off for 1 hour on the smoke setting with the ham placed directly on the rack. After 1 hour remove the ham and dry rub with your favorite pork rubs! Place into a foil pan and return to the smoker. Set to 225F and smoke for 2 hours. Then pour 1 cup orange juice, 1/2 cup teriyaki sauce, and 1 cup Dr. Pepper individually and directly onto the ham. Cover the pan with foil, increase the temperature to 275F for the next 2.5-3 hour or until the ham reaches an internal temperature of 140F. While the ham is smoking prepare the glaze below in a medium saucepan.
    Ham Glaze:
    - 1.5 Cup dark brown sugar
    - 1/2 Cup orange juice
    - 3/4 Cup honey
    - 1/4 Cup teriyaki sauce
    - 1/4 Cup Dr Pepper
    - 1 teaspoon ground cinnamon
    - 1 teaspoon ground cloves
    - 1/2 teaspoon chili powder
    Combine glaze ingredients in a medium saucepan and stir continuously on medium heat. Bring glaze to a boil and remove from heat. Let cool so that it ends up a syrup like consistency.
    When the ham reaches 140F, remove from the smoker and drain the juices from the pan. Cover the ham with the glaze and return to the pellet smoker at 400F for 5-6 minutes or until the glaze caramelizes. Remove and serve!

    Quick tip: When you are putting the honey in the glaze, lightly coat the measuring cup with cooking spray or oil (or a thin coat of butter). When you add it into the glaze, you will get every single drop of that sweet honey, and it will come out faster, leaving a clean (relatively) cup!

    Just found this video. I have the Camp Chef Woodwind, and I love it. Easter Sunday, temperature dropped, and it rained all day. Had a hard time keeping my pellet stove up to heat, so it took longer, but it did the job. Best ham I've had in a long time, and the glaze was delicious.

      It takes away from the smoke, but the moisture helps push through on the cook and produce a nice juicy ham. Also letting it steam in the teriyaki, DDP, and OJ makes for a nice flavor! Thanks for watching man!

    Love the channel. Began watching after searching for PitBoss verticals after I bought mine several years ago. Used your glaze recipe with just a few changes (pineapple instead of orange), and it was fantastic. The Dr Pepper was a great addition. Keep up the awesome work!

    It looks like and I am sure it's delicious. The only thing I think you could have added was sliced canned pineapple speared on the ham with cloves when you covered with foil and added the syrup from the can into your final topping. Spearing them allows the pineapple to soak and coat the ham with your syrup. Good job!

    Wow that color was amazing after the two hour mark and even better when finished. Where'd you get the framed bottom handle for your aluminum pan? That's a pretty smart way of dealing with those pans. Thanks for sharing.

      My local grocery store has a pretty good selection of aluminum pans and have a few with these handles.... I never even thought about it but I should've tried to pull it off and try it with another pan...

    You may have mentioned it in the video, but what was the total cook time on this ham?

      I think it was around 5hrs.. from the point we wrap it up in foil we start monitoring the internal temp, so time isn’t as important then.

    I’m new to pellet smokers and wanted to ask a few questions. I was looking at the smoke pro dlx. What is your opinion on that compared to the char grill 980? What is longevity of a pellet smoker? Lastly, how much meat can you smoke on one? I guess it can smoke a full brisket? Thanks for any help and I really enjoy your videos.

      You can definitely cook a brisket on the DLX! It really depends on your preference. Pellet grills typically produce a more mild smoke flavor vs charcoal a little more bold. Both run great, but a pellet grill is slightly easier to operate.

      I didn’t film the gasket install but I lined them up other gasket to make for a tighter fit. I have a link in the description that should take you to the gasket I used.
