Hello, I tried a few recipes and ny bread turned out very soft. So soft to the point that got me wondering if my bread is actually underbaked. Lol I bake my Spanish bread at 325 degrees F for 20 months. How can I tell the difference?

Hi, after coating the doigh in bread crumbs, how many minutes or hours does it need resting before baking?
Better 15 to 30 minutes to let rise dough for last time .
