Does an agent ever ask for edits they didn't tell you about before you signed on? Like if they were the only offer, they have a lot of power to flip the script. Is this behaviour frowned upon in agenting circles? *The things I worry about for no reason as am not yet even querying* 😅

If they are an editorial agent, it is likely they will have edits in mind, but it's up to the author to ask before they sign. If they haven't discussed any edits when they have the Call, they may still ask for some edits if the market changes e.g. when romantasy became big, if an author had a frantic fantasy then their agent may have asked them to up the romance element to catch the wave. Or they may also suggest edits based on their conversations or knowledge of editor tastes. Like if they met an editor who said I would love this trope and the book is adjacent to this, the agent may ask the author to build this trope up a bit. Either way, the agent wouldn't know if they were the only offer (unless the author discloses this to them).
