We also rinse out the insides of the fish and rub it out with a piece of lemon as well as squeezing lemon juice on the skin like you did, as this definately takes away the fishy smell. Lemon is also used for rubbing out chicken insides where the guts were. My Mum used to sometimes cut the heads off and trim the tail and fins off which are not eaten and also take the gills out, also not eaten. The scales are usually removed before cooking and disgarded.
