I'm a Cheeseless Mexican n Bendito, it was a struggle growing up. My beloved "Mamà" gave me 5 mins to separate my food before she added "queso". No "Quesadilla" for me!, lol. "Sopa de arroz", fresh "Tortillas de harina" & "papa frita", "Tacos" were safe sides for me, lol. The rest, I had to hurry n separate, like refried Frijoles, enchiladas, chilaquiles, chile relleno, Capitotada & etc. 😊....Mì amada Mamì, was pleasantly surprised that I didn't deny my own familia & friends platillos/dishes with queso. This looks Great. Very different than the one we grew up eating. We used grated cheese and to a greater quantity than shown here also walnuts or pecans instead of peanuts. And no plantain or mango

Everyone has their own take on this delish traditional Postre. My beloved "Mamà" did not use plantain & thats A-OK. I of course had to separate my portion before she added "queso", lol. Patì's version looks yum too. 😊 "Isa"
My mom made a capirotada but not with bread. She would use a sopapilla dough instead. And also she would use cheddar cheese instead of cotijo cheese. I loved it!
I have become a true fan of everything you do ! It is so relaxing to watch your videos (every single one). Before watching your show I had no idea about Mexican food. I can say it's very different from the food of my country which is Turkey and as you may know we also have very tasteful dishes. You guys more often use and mix a variety of vegetables and exotic fruits (which we don't really have in Turkey). But anyway I'm pretty sure everything you make is delicious. I'll be more than happy to try one of your recipes! Thank you for all the tips :) Much love and respect.

Pati, te sugiero que experimentes haciendo la capirotada con el mismo procedimiento y los ingredientes. Pero no uses agua, sustituye la misma cantidad con tres clases de leche: clavel, Nestlé condensada y regular. Agrégale tres gotas de vainilla.
I love her recipe’s but I get so grossed out when she takes a bite. It’s like she’s starving. Everything she tastes is with a huge spoon or over stuffed fork. Why not just take a bite? Her kids asked her to take smaller bites because they were embarrassed.
