- Our Shaheen Bagh food journey continued with even more delightful discoveries, leading us deeper into the vibrant culinary heart of the area. As we ventured through the bustling lanes, the aroma of spices and fresh food pulled us from one stop to the next, each offering something unique and delicious.
We began at Sikandar Sweets, where the sweet aroma of freshly baked treats beckoned us inside. We picked up some Nan Khatai, those melt-in-your-mouth shortbread cookies made from semolina, gram flour, khoya, and sugar. Alongside it, we grabbed a Nariyal Sheermal, a soft and fluffy tandoor-baked flatbread rich with the flavors of khoya and coconut. But what really elevated this experience was pairing these goodies with tea from the iconic Nagori Tea Stall. Though once known for selling fresh milk, the stall now specializes in serving steaming hot tea. We indulged in the Bun Malai-a simple yet delicious snack of soft buns smeared with thick, creamy malai that made the perfect companion for our tea break.
From there, we moved on to Pulao Wala, where the owner’s Bihari roots shine through in every dish. The pulao, made with fragrant Katarni rice, was subtly spiced yet full of flavor and paired beautifully with their rich chicken curry. We also couldn’t resist trying the Mutton Bihari Kebab, a traditional skewer-grilled delicacy made from tenderloin strips, perfectly seasoned and tender. And for dessert, we savored a bowl of Makuti, a traditional Bihari sweet dish made with moong dal, rice, milk, and khoya, topped with nuts for an indulgent finish.
Next up, we visited New Alam Biryani House, where the star of the show was their Moradabadi Biryani. This mildly spiced one-pot dish of fragrant rice and tender chicken had all the comforts of home-cooked food, each bite more satisfying than the last. To quench our thirst, we stopped by King Goli Soda and enjoyed their refreshing Lemon Soda, the perfect palate cleanser for the meal.
The next leg of our tour took us to Doner Valley, where we tried their Chicken Doner Pita Bread. The pita pocket was stuffed to the brim with juicy doner kebab, fresh veggies, and a tantalizing mix of garlic and spicy sauces-an exciting blend of textures and flavors that made for a memorable bite.
We ended the tour on a sweet note at Mysa Cafe with their Kunafa. This Middle Eastern dessert was pure indulgence-a delicate balance of crunchy, buttery vermicelli wrapped around a soft, cheesy filling and drenched in sugar syrup, a perfect conclusion to our flavorful journey through Shaheen Bagh.
This leg of our food walk revealed how diverse and delightful the culinary scene in Shaheen Bagh truly is.
As a Muslim from Munger, Bihar, I can confirm the man's accuracy regarding Katarni pulav and Makuti. I have personally consumed similar dishes at local shadies

Clarified butter ghee hai.. Pata nei ye cook bhaisaab alag hi bataya.. I think just to make feel good. Ghee is best❤
There are 3 kind of fat we use as a medium of oil fat( in relation with butter ) ,
1- Normal regular butter ( salted or unsalted) milk fat and mil solid both is present , completely unhealthy as maximum fat present .
2- Desi ghee ( generally people calls it clarified butter as we use popularly in India only ) milk fat is removed and milk solid is present (the base part when turns brown ,we get desi ghee that is milm solid).
3- Clarified butter - popularly used in all over world ( new term and product as we started using ) - milk solid and milk fat both is removed , so we get more good on health note and there is similarity between desi ghee and clarified butter but on health note 10-15% differnce is there.

@@mdshahabkhan7109 Sir you have some absolutely new definitions of ghee, butter and fats . Kindly ask Wikipedia to change their outdated definitions.
First of all no milk fat is removed ever , Infact desi ghee /clarified butter are both 99% pure fat . Normal butter is around 81% fat. Heating and getting rid of milk solids from butter gets us pure (99%)milk fat that is ghee or clarified butter which are both identical . So as seen in the video the kunafa is drenched in pure fat .
Maybe you don't agree with Wikipedia or the current scientific knowledge but atleast don't insult your customers by calling your product "healthier" .

While both of them share similarities they have some essential differences as well
Production method: Both clarified butter and ghee are manufactured by separating the milk solids and water from butter, the methods of manufacturing differ slightly. Clarified butter is created by melting butter and skimming off the milk particles that rise to the surface. Ghee, on the other hand, is prepared by boiling butter until the milk solids separate and sink to the bottom, after which the clear liquid that is left is strained.
Enhanced flavour: Ghee has stronger colour and flavour than regular clarified butter. Clarified butter has a mild, buttery flavour, while ghee has a richer, nuttier flavour. This is due to the fact that ghee is cooked for a longer period of time, which caramelizes the milk solids and gives it a more complex flavour.
Shelf life: As the milk particles have been eliminated, ghee has a longer shelf life than clarified butter because there is less moisture in the finished product. This reduces the likelihood of spoilage and rancidity.
Smoke point: As stated earlier, Ghee has a higher smoke point than clarified butter, which means it can be heated to a higher temperature before it starts to smoke and burn. This makes it ideal for high-heat cooking methods like frying and sautéing.
