Like is the Korean word supposed to be based on the Japanese word or is it original to Korea? Also, a couple of other "extras" I like in tteokbokki when making it at home are sliced spam 😅 and hard boiled eggs. I cut the spam pretty thin and let it boil in the sauce while preparing it. I too like ramen and cheese on mine. And dang man, Carolina Reaper!? That woman does not mess around, lol. "The Carolina Reaper was certified as the world's hottest chili pepper by Guinness World Records on August 11, 2017"
i am not sure which is which, but in Malaysia, we have something similar to "sojebi". Its called Mee Hoon Kueh. Its a Chinese dish. Its exactly as how you describe being "pulled" from a block of dough. It can be served with soup or dry. Soup variants come in many different tastes, some are cooked with pig bone broth(the best), some are chicken bone, and rarely anchovy broth(ikan bilis). Dry versions give you the option of eating it with "sambal" (chilli paste). They usually come with good helping of "mani cai" or "sweet leaves", minced pork, pork meat/fish balls, more anchovies. If i recall, its one of the most simplest dishes to make and back when things were hard, it was the best bang for your buck meal to make for a small family. And you are right, the dough that is used to make this, CAN be turned into "noodles". There is a special hand cranked tool that would usually give you at least 3 settings(i have 1 that has 5). It could roll out the dough flat which you can start plucking it out or turn that dough into different widths of "noodles".
