Strawberry Mead. 10.5% ABV

- Strawberries from my garden and honey from my bees.
Starting gravity 1.084
Finishing gravity 0.999 - 0.998
Final ABV (alcohol by volume) 10.5%
Ingredients:
4 pounds of strawberries (washed and stems/leaves removed)
1 gallon or 4 litres of water (I used distilled, any water you would drink is fine)
2.5 pounds honey (I used raw organic wildflower honey)
2.5 grams Lalvin RC-212
1/2 tsp Pectic Enzyme
1/4 tsp Citric Acid
1/8 tsp Wine Tannin
*Yeast Nutrient (I recommend nutrient for store bought honey. I did not use any nutrient in this recipe)
Equipment:
Bucket or pail for sanitizer solution. (I use Star-San as a sanitizer)
2 gallon primary fermenting pail. (A stoneware crock also works great)
1 gallon glass carboy.
Airlock and bung to fit carboy.
Hydrometer and cylinder.
Wine thief. (I use a food grade stainless steel turkey baster)
Food grade syphon tubing. (I use an auto-syphon)
Brew Bag. (I used a 12 x 14 inch Nut Milk Bag)
