I think you went to these places at a good time, when lockdown in certain places were still ongoing and so domestic tourists are not many, as seen from the one at Terracotta Museum. It's hard to see sparse tourists at China's famous sites. At normal times, the crowd is crazy!
Yes, we already thought the same. If we look back through our travels last year, covid didnt impact us too much. Instead, we enjoyed beautiful sites without any crowds :)

In Xi'an the Chinese burger has two types, one which is the the one you guys eat is beef burger cause that's Muslim food , another 肉夹馍 more famous as well known as Roujiamo 肉夹馍 is pork meat.
The meat loaf you bought is white and soft in taste. I recommend that you buy baked one next time, which is more suitable for foreigners' tastes. The bread skin is crispy.
It's pronounced Xi An, as two separate words, not one. The ' is there to hint this to you. All Chinese place names consist of at least two words (characters). Most of them are obvious where the characters split, but when it's not obvious, they use a ' as a marker for the split.

Nanjing’s city wall may not be as gigantic as Xi’ans but Nanjing city wall is the longest preserved ancient it’s wall
I have heard about that, but have unfortunately only been for business in Nanjing.
