Why we have go with triggers instead of flows,flows can perform before and after events and trigger also can perform before and after events

1. No undelete option is available in flows
2. Flow execute more slowly as compared to triggers so when it comes to complex scenarios flow will take more time to execute and can also exceed to CPU limit . So it is advised to go with triggers for more complex scenarios.

You can manage the visibility of record types from profile but not picklist values visibility.
Let me know if you have managed this from security will be good to know another way.
