The avocado alone is more than the $1.69 quoted. A cup of sushi rice isn't cheap anywhere I know of, either. Even assuming you didn't use the entire chicken thigh or the entire avocado on one sandwich... no way is this even within 2 or 3 times as cheap as stated.
I make these! I've been wrapping things in nori since I was a kid.
This, coupled with the spring rolls from earlier in this same episode, are a great lunch.

for sure let it cool - the heat of the rice would cook and disintegrate the nori

You should try and actually pay attention, as he shows what the prices are for each ingredient. Final amount is per serving. Common sense, really.
¢69 quoted using a quarter of the avocado. That puts it around $2.75 which is correct for an avocado in my area
