DITL: Sedona Day Trip for my Birthday, Dehydrating More Chili, Tofu Cubes, Raw Vegan Lunch on the Go

  • Here's a fun day in the life video with my birthday trip thrown in. I hope you enjoy it!
    VeganPrepper Tofu Cubes:
    Per 16 oz block of firm tofu, add 2 tbsp liquid aminos and 1/4 cup nutritional yeast.
    (For a double batch, slightly decrease the liquid aminos to more of a scant quarter cup.)
    I first slice the blocks in half (so it could open like a book), then cut 6 sections off the longer side and 5 sections off of the shorter side to end up with cubes that are about 3/4" in size.
    Line a baking sheet with parchment paper and preheat the oven to 425F.
    Put the tofu cubes in something relatively flat (like a large dinner plate for a single batch or a 9x13 dish for a double batch) and pour the liquid aminos on top. Add the nutritional yeast over top and toss it all together. Spread on the baking sheet and pat any leftover sauce on top. (If you try to coat the cubes in a bowl, they will mostly fall apart. Coating them on something flatter allows you to be a bit more gentle. As a bonus, you can use the flat surface to do all of your cutting, too.)
    Bake for 20 minutes (30 for a double batch), then stir. This one will be more of a gentle scrape off of the parchment. Gently toss them around the parchment and put them back in the oven.
    Bake for 20 more minutes and stir again. (Same time for a double batch.)
    Bake for 20 more minutes and they're done! Get ready to slap hands away from the baking sheet if you're still trying to finish other things up for dinner. We eat them as is, as salad toppings, mixed in rice, etc. But I also really love to use them as the "meat" chunks in various dishes. Chicken pot pie, beef stew, etc. They are my FAVORITE meat replacement in dishes like that where you're looking for more of a chunk.
