    I love smoked mackerel and I'm always looking for new recipes for it. One of my favourite ones is to mix it with cream cheese, lemon and horse radish sauce and spread it on little chunks of crusty bread, at BBQ's, it's always very popular !

      That sounds similar to a popular spread in the Upper Peninsula of Michigan that uses local smoked Whitefish. It's fantastic.

      Make something similar with smoked mackerel and horse radish but with creme fraiche instead of cream cheese. A bit of smoked paprika is good in it too. Will have to try the cream cheese version now.

      I’ve had (and made) a creamy horseradish sauce for smoked trout and smoked salmon which had finely diced apple in it. I assume it could work for smoked mackerel although I haven’t tried.

    If you're ever looking for smoked mackerel whole, I recommend looking in a Polish market. Head and all is avaliable.

    Whenever I make jalepeno poppers, I almost always deseed them, but then I'll save the seeds, make a portion with no seeds, a portion where I put the seeds back in the cream cheese mixture, and one where I double up the seeds saved from the most mild version. I find that the seeds add a nice texture and everyone from those with sensitive pallettes to people like me who chase that spicy high can all enjoy them. Being able to cook for yourself is great, but it's even more rewarding to cook for loved ones, being able to be accommodating but also not giving up your own style

    I know why I'm subscribed to this channel. Yeah, that voice sure is pleasant - but it's actually the way you make your videos. Doesn't really matter if you're scambaiting, cooking, or something completely unrelated - you always explain exactly WHAT you're doing, and WHY you are doing it.

    Great stuff with getting the locust beans, sounds like an amazing umami flavour burst. I do love fish and vinegary salad.
    Very British to make a sandwich. I love fish and salad sandwiches, and I'm sure we have both had fish finger sandwiches.

      The more I think about it, the more it amazes me the locust beans are not already a common ingredient. They are very easily on a par with soy sauce, fish sauce, Marmite, etc (but different from those things) There is an untapped export market there, I feel.

      @@AtomicShrimp Maybe its like other exotic ingredients like Durian and Stinky Tofu, its smell is offputting but you don't realise how good it actually tastes till you bite the bullet and do it. Umami is deff a lost flavour in most of the west and its normally whats missing in a dish

    I'm guessing a good alternative for the Locust Beans for us folks here in the UK would be to actually add a dab of Stilton and maybe some finely chopped anchovies?. I might give this a try. Thanks Babatunde and Atomic Shrimp!

    so could you theoretically get the same effect as the fermented locust beans by crumbling some stilton into the salad and drizzling a bit of soy sauce on top? how close do you think that would come to the real flavor?

      I think that would be pretty close - certainly if you wanted to get an idea for whether you will like locust beans, it would be a good yardstick

    The hottest part of the chilli is the pith also know as the placenta and the oils in the chilli. The seeds hold on to the capsaicin alot so if you wash the seeds or let them dry out you are just left with a bitterness only very slightly. I have been researching capsaicin and chillies for about 5 years and growing and eating super hot chillies for 3 years.

      Sure, but the unwashed seeds can have a fair bit of capsaicin on their surface, from contact with the glands. It's not incorrect to say that the seeds are hot, because nobody washes the seeds.

    Been experimenting with locust beans recently. I'm not used to strong funk like that, but it's been growing on me rapidly, especially since the umami keeps me coming back. BTW you can get dried iru that keeps well in the cupboard.

    Here in the coastal region of Germany various species of smoked fish are available at the local farmers' markets, as well as the other ingredients (or at least substitutes). The "Stilton and soy sauce" will make things much easier, thanks!

      Joey, you should try to introduce fish slowly in your diet. You can acquire the taste. Too much red meat is not healthy. Try going for species that have a mild taste and use plenty of herbs and spices. Some species are low in contaminants and can be eaten every day -- which is what I do.

    You can get smoked mackerel fillets in tins at Tesco. No sauce, just the fillets in a little oil.

    Such a cool salad recipe! I've got to try it out (without the hot peppers, though, I'm not good with heat, lol). In my native country (Romania) we call those onions white onions (since the flesh is white), and red onions are obviously red onions - although I've noticed that there's red onions and shallots here, which I believe are indistinguishable there at least for people who don't cook professionally.

    Having witnessed a terrible Chili pepper.. we will say incident once. I get very nervous watching a person handle them with out gloves. Very good video.

      @@Jamal_Tyrone that’s exactly what happened. New kid stocking hot peppers. I’d told him to wear gloves. Nope. I told him to wash his hands. Nope. Some peppers in a box always get crushed so juice gets around. I was scared for his eyes. Hadn’t thought of anything else. But later after a trip to restroom he was in a terrible state of pain and embarrassment. Wear gloves, carefully wash your hands and both better. I adore peppers. But I respect there powers.

    Just a slight correction, salads aren't quite unusual in Nigeria. In weddings or birthday or just any celebration you'll find them among the buffet items although the contents might differ from a western style salad. Another difference is that the vegetables are absolutely drenched in salad cream or mayonnaise(depends on your tastes really) and the vegetables are lightly blanched before serving.

    You should smoke your own fish if you can, I love smoking food. It's alot of fun and tastes delicious when done homemade especially.

    I watched Babatunde's video first, and the eyeball eating made me squirm. I really don't like strong flavours, so I don't think this meal is for me, but was nice to see both versions of it.

    I wonder how possible it might be to ferment one's own locust beans, a quick Google indicates there's not anything significant added and they are simply kept at 37°C for some period of time. I'd love to see you attempt this
