- Hi everyone, today’s video is baking cherry and almond cupcakes. Please try making them, they are so easy yet delicious.
RECIPE:
Ingredients:
5 oz self raising flour
1 oz cornflour
1 x tsp baking powder
6 oz sugar of choice
6 oz stork/margarine
3 eggs
2 oz ground almonds
1 x tsp vanilla essence
1 x tsp almond essence
Almond flakes
1/4 cup of morello cherries cut into small pieces
50-60 mls of milk
Method:
Mix stork and sugar till light and fluffy. I used an electric whisk.
Add eggs one at a time and mix till well incorporated.
Add vanilla essence and almond essence.
Sift flour, cornflour and baking powder into the mix, after taking a little out to coat the cherries.
Add the ground almonds and mix well, then add the coated cherries.
Add as much milk as needed to form a nice batter.
Line the cupcake tin with cases and fill about 3/4 way up with the batter.
Sprinkle the top with flaked almonds.
Bake in a preheated oven at 160 C for approximately 20-25 mins, check with a skewer or toothpick, if it comes out clean the cupcakes are done.
Enjoy with a nice cuppa.

Super enjoyable baking video. I’m enjoying baking myself recently and your 6,6,6,3 method is such a great tip for me so thank you for sharing that. I’ve never really been a baker as such and I was saying to max last night , it’s so therapeutic because unlike cooking (which I love to do) baking is less of a rush so I find it quite a mellow pass time.
Your cupcakes looked delicious and the recipe as you say is really quite versatile .

Morning Lynn - enjoyed that - when I baked with my mum when I was a child I absolutely couldn’t wait to scrape the bowl and lick the spoon 😂. Haven’t baked in years as I end up having to eat them all but it is definitely tempting to make some even just to taste the mixture again 😂😂. Enjoy eating them ❤❤❤

They really are so very tasty, just the right amount for a nice treat. I’m sure you will enjoy them Sue, just a little tip, if I make them again, I’ll put the batter in the cupcake first, then add the cherries because one or two of mine hardly had any cherries in lol. You could leave the cherries out, put half the batter in, then a dollop of jam, then the rest of the batter, I bet they would be delish. I’ve never made Battenberg cake, I’m not keen on marzipan to be honest. Thank you so much Shirley ❤️❤️❤️

Hi Julie, the earrings are gold hoops that I bought years ago on eBay, and I just threaded the pearls onto them from another pair that went a bit funny. The necklace was Tesco I think but a couple of years ago… sorry I’m not much help am I ❤️❤️❤️

I’ve never tried, but I don’t see why not, I’m not sure how the flaked almonds would defrost though, but worth a try. I suppose you could leave the flaked almonds off, then when defrosted, brush some apricot jam on the top and then sprinkle with almonds, that way they will stick. Just a thought ❤️❤️❤️

I always use an ice cream scoop one of those spring ones to put the mixture in the cases , it takes the guessing out of how much mixture is in each. I use the same batter mix quantities but without the milk because my eggs are large. They look scrummy.

Good morning Lynn, as a baker, I will definitely be making these. They look delicious 😋 I always use the 6663 method and get 12 good size muffin cupcakes. I have an aversion to the raw batter and could never stomach it lol. My kids didn't though or my grandkids. To stop cherries from sinking you have to wash them, dry completely and then coat in flour but I find doing that takes a lot of flavour away. I adore anything with cherries/almonds,bakewell related!
I notice that all the cherries had sunk to the bottom, despite you tossing them in flour.
I get exactly the same problem when I bake with dried fruit...so frustrating.
Does anyone hve a fool proof tip to get round this issue?
Oh Suzi, I had to laugh because Harvey got one with no cherries at all in hahaha. Next time I’ll put the batter in the cases and then add the cherries to make sure each cupcake has some. It gave him an excuse to eat another 😂🤣😂🤣❤️❤️❤️
