Cataract surgery is a marvel. To think: before modern times, they meant eventual blindness. Having that surgery made my world all bright and shiny again, and, bonus, without glasses (which I had warn since I was four years old!).
And, even though not quite as amazing--Spam is another wonderful thing...😏Love kalua pig, also.
same with me, it has gotten better over the last hundred years, but imagine before the surgery, watching your vision going away and nothing to be done about it....scary
@@seymourwrasse3321Still scary, since cataracts have to 'ripen' enough to justify the surgery, and this process means your vision is becoming less and less acute. Sure glad Medicare will pay for most of the surgery. I have multi-focal in one eye and far vision in the other. If I were to do it again, I would choose multi for both eyes--even at the increased cost. I'd just save up a bit longer--and see progressively poorly a while longer......delayed gratification??? 🤨🤔
It's encouraging to know that I can see better again someday... My eye doctor says my cataracts should wait a few more years, because apparently it is a progressive thing? But both of my parents had the surgery and my dad had especially great results and threw away his glasses! :)

"Sometimes you just have to get out of the house". You got that right. Cabin Fever and a big stress release to just get out of town. I get a little of that from you watching your videos. It's not as good as actually doing it, but sometimes that's all I have. It helps. Good to hear Linda had a good operation. Take care of your health as you well know.

Hubby had cataract surgery this past month. What a difference it’s made! Amazing how quick and easy it is huh?

Well that's interesting about the shortest river -- as Johnny Carson used to carefully enunciate, "I did not know that!". I'm a bit jealous of your snow in March - - still young enough (67) to enjoy a frosty morning, a warm coat, and a steaming mug (Lapsang Souchong). I'd be a lousy snowbird.
That breakfast is top notch; I'd be just as happy with grits (they require more attention, though). Make my Spam the reduced sodium variety. Your egg technique is perfect.
One of these days I'm going to buy that pressure cooker and copy your pork roast cooking style. I'll need a smaller piece of meat since there's only one of me these days. That's pretty exciting about the eyes -- I hope the recovery isn't too uncomfortable.

Linda sometimes puts the meat in freezer bags and freezes it for later.
I loved watching the recipes... I was reminded recently that several years ago I got a Instant Pot for Christmas and have rarely used it... So I took it out two days ago and cooked some dried beans in it... and wow! They were so tender! Also haven't tried too many different types of rice, but this is a reminder to try some new ones! Usually use Batsami or traditional long grain white rice. Now I want to try sticky rice!! That short River story with video was a real treat! Who knew? It looks beautiful there... I think often because I like to Travel so much I forget to truly enjoy my surroundings that are right out the back door... For example I am 7 minutes from Multiple Water Falls ( McDowell Creek Falls) Also minutes from Foster Lake and just minutes from the South Santiam River... Dozens of parks with walking trails and Nature... Time to get out there even though it's still cold!! THANK YOU !!!!

I had to smile when Linda got busy in the camping trailer, using all electric kitchen appliances. My goodness, how the times have changed! Glad to hear your cataract surgery went well. Mine was superb 3 years ago.

Cataract surgery is amazing, after wearing glasses from my 30’s for 40+ years . Had it done a year ago, I went from required to wear for driving to 20/20 in one eye and 20/25 in the other. I only need glasses for reading now and not near as strong.
It's amazing...my right eye was really bad coupled with the glaucoma at 20/100. After the surgery, it went to 20/25! I am amazed.

Love the instant pot! Linda, I make kalua pork in the instant pot. I rub it down with a litte Hwn salt and liquid smoke before it goes in. Then your hands smell smoky all day and into the next.

Fantastic spring! Spam is delicious but sodium is not our friend as we age........ hard to find prepared food without loads of salt. A tough nut to crack :)

You said old age is not for the weak or the stupid. The D River on the Oregon coast is 120 ft. long. Both rivers are interesting & it would be stupid to argue about which is truly shorter.

We have man made water stairs here in Illinois and the water coming through that area, cleans the water naturally of pollution.
That's interesting! I have a new type of water testing probe showing up today that I'll be reviewing soon and you may be interested in seeing that.
A big worm gear pulls water out of the ship canal, up to a higher level and the flows down several stairs and back into the canal. Supposedly cleans the water naturally. @@gonagain

spam and egss ! gooooood ! but something diifferent olive oil in the pan first then the spam, then the eggs and when cooked flip over the cook the other side, . the olive oil thickens the white yolk almost double the size in thickness. when you go to a restaurant they use vegatable oil , that thins the yolk down and burned the around the yolk, . then the rice over the whole thing?

Hey Rick, I love your spam rice breakfast, small suggestions to make your rice taste better is to pre - soaked the rice in water for an hour , it will not only cutdown the cooking time, but will also make the rice taste better. You can also sprinkle some Dashi powder to cook the rice, it will give an extra favours to your Japanese rice

Spam is very popular in Hawaii. The locals have a dish of spam and green beans, just sauteed together. Add a little bit of garlic and black pepper.

Now you tell us... I just told Linda that and now we're sitting here stunned by our stupidity.
I eat a lot of spam but unless it is the low sodium type I have too boil the meat too get rid of some of the salt. Can't handle too much salt in my food. I very seldom use salt in my food and I have found out that a little bit of salt taste well but you have too keep increasing the amount over the years too get the same results. Apparently it appears as if salt deadens the taste bud.
Rick, if you use less water in your rice, make it sticky ? I always use 1 part rice to two parts water ! Oh by the way Spam is no good for you! It gets in your mouth!
Only the medium grain will be sticky, the long grain just won't work at all. Less water just makes it drier, or less gummy.
Hey Rick, I use smart power plugs by Eve, they show volts, amps and watts being drawn point in time and historically. This is how I track electric usage in Taj! Might help you understand the inductive stove top. You could also get a kill-a-watt that is all on the plug itself and doesn't need a smart phone.

I prefer my spam sliced thin and crispy like bacon. It is a great easy breakfast.
Fish sauce, after many tries, still can’t warm up to it, it’s an acquired taste.
There's times when I don't care for it either, like while it's cooking (afterwards it's ok). It's also ok in the small amounts that Linda uses on some salad type dishes.

I know that breakfast well my favorite also. Lived in Hawaii 9 yrs. All children born there. Married to a Hawaiian/ Portuguese man. I use my finger to measure the water for the rice. We had a big Rv at our state fair one year giving out single packs of spam one year. Lol was ono. Auntie is there a reason you didn’t put the salt and liquid smoke in the cooker?
Yes, I've tried all the other ways, salt and smoke in the water, rubbing the pork with salt and pork first, etc. This way is so easy and it comes out tasting like it came out of the imu. Plus it takes me back to when we did our pig in our backyard imu and had to add the salt and shred by hand.

Glad Linda's getting her eyes fixed up. That is a monster spring with so much volume coming out of it. I love the sticky rice with BBQ pork and other goodies in it we get at Sun Ya Chinese restaurant during Dim Sum Lunch here in town. A little hot oil on it and paradise is upon your taste buds. Remember, I made that Hawaiian Pork recipe for the most part after Linda showed it. very tasty! OK, No other way to say it, SPAM is punishment, prison food, Vegemite for Americans! I think the Tasters Choice you guys were having was the Columbian, hard to find in the jar and my favorite flavor. Best wishes to Linda on April 8th. We will be in Texas by then watching the Eclipse. That will be a lot more fun than the wet, moldy, fungussey, rodent infested, crawl space I was working in, replacing old leaky plumbing in earlier this week.

Hawaii and Guam are the biggest consumers of SPAM. You should see/eat some of the dishes we come up with using spam. But then, we've tried vegemite and liked it too.... so there is that. Aloha~~Linda

I thought it looked strange and didn't eat it. Plus, mom was a great cook, and I knew if I waited a bit longer to get home, it would be worth it. Why is it always so tough to hit the road? The little one is a 12volt rice cooker, found on Amazon. The bigger one is a household rice cooker that you can buy at any department store.

We haven't seen the BRCC coffee yet, but we'll keep an eye out for some. There's times when instant coffee is handy to have around.

I need a little help. I can either purchase an Ecoflow Delta 2 + 220W solar panel for $900 or the Bluetti AC200P for $1000. Just looking for power during outages or while camping. Which would you do?
Because the AC200P needs a minimum of 30 volts to charge, we would go with the Ecoflow Delta 2 in this case.
