Unlinking would reduce the number of holes from 3 to 2. In calculating the Euler characteristic (v-e+f) we mentally cap the holes with hexagons, so unlinking reduces the number of faces by 1 and hence reduces the Euler characteristic from 1 to 0, and we get the Klein bottle. --R

With the boys surface one, why can’t you just unlink the cross caps and get a 3-cap surface without changing the Euler characteristic?

So at 2:27, the strips are taped together behind the crossovers?
Yes, each strip has two seams -- one hidden under the fold and the other under the crossover, so they not that easy to see. --R
